  • [A] 50ml water
  • [A] 1 tsp sugar
  • [A] 5g salted butter

Steps

  1. Finely chop 1/2 onion. 【Here's the tip!】 Chop it as finely as possible so it mixes well with the meat.
  2. Place the chopped onion in a heat-resistant bowl, cover loosely with plastic wrap, and create one small opening for steam to escape. Heat in a 600W microwave for 1 minute.
  3. Remove the plastic wrap, spread the heated onion evenly, and let it cool down completely.
  4. In a separate bowl, combine 3 tbsp breadcrumbs and 3 tbsp milk and let the breadcrumbs soak.
  5. 【Here's the tip!】 Soaking the breadcrumbs helps them mix better with the meat.
  6. Add 300g ground meat blend to a bowl, add 1/2 tsp sugar, and knead thoroughly. 【Here's the tip!】 Adding sugar first adds richness to the meat and its moisture-retaining effect makes it fluffy and tender.
  7. Sprinkle with salt and pepper to taste and knead well until it becomes sticky. 【Here's the tip!】 Kneading thoroughly at the beginning results in very tender meat.
  8. Add 1 egg, the soaked breadcrumbs, 1 tbsp mayonnaise, 2 tsp miso, and 1/2 tsp grated garlic, and knead until evenly combined. 【Here's the tip!】 Onions release moisture, so don't add them at this stage.
  9. Add the well-cooled onion and mix gently. 【Here's the tip!】 If the onion is warm, it will cook the meat, so be sure to add it only after it has cooled down.
  10. Divide the meat mixture into 3 portions.
  11. Lightly moisten your hands with vegetable oil, take one portion of the meat mixture, remove air, and shape it. 【Here's the tip!】 Firmly removing air prevents cracking during cooking. Since it will shrink when cooked, make it slightly larger than the desired finished size.
  12. Shape the remaining meat mixture in the same way.
  13. Heat vegetable oil to taste in a frying pan over medium heat. Place the shaped hamburger steaks in the pan and make an indentation in the center. 【Here's the tip!】 Indenting the center improves heat penetration.
  14. Cook for about 2 minutes over medium-low heat until browned, then flip.
  15. Brown the other side over medium-low heat for about 1 minute and 30 seconds.
