Two types of omurice recipes, classic and fluffy/melty, that you can make without failure at home. We'll teach you easy ketchup rice using the microwave and professional egg-rolling techniques. Enjoy a dish with a rich flavor, just like from a Western restaurant.

Ingredients

Main Ingredients (2 servings)

  • 250g Rice
  • 2 Sausages
  • 1/3 Onion
  • 60g Mixed Vegetables
  • 4 Eggs
  • 2 tbsp Milk

Seasonings

  • 3 tbsp Ketchup
  • 3 tbsp Butter
  • A pinch of Salt
  • A pinch of Pepper
  • A pinch of Sugar
  • 2 tsp Vegetable Oil

Steps

  1. Finely chop 1/3 onion. 【This is the key!】Thinly slice the onion, and cut it while leaving the root end attached to make it easier to chop without it falling apart.
  2. Place the chopped onion and 60g of mixed vegetables in a bowl, cover loosely with plastic wrap, and microwave (600W) for 2 minutes.
  3. Slice 2 sausages into rounds.
  4. Add the sliced sausages to the bowl with the microwaved onion and mixed vegetables.
  5. Microwave 250g of frozen rice.
  6. Add 3 tbsp ketchup, a pinch of pepper, and a pinch of salt to the warmed rice and mix well to make the ketchup rice.
  7. Crack 2 eggs into a bowl, add about two pinches of sugar, 1 tbsp milk, and a pinch of salt, and whisk well until the egg mixture is uniform. 【This is the key!】Adding sugar will result in a fluffy and moist finish.
  8. Heat 1/2 tsp vegetable oil in a small frying pan. Once heated, add 1.5 tbsp butter and melt. 【This is the key!】Adding butter after heating the oil thoroughly makes it less likely to burn.
  9. Once the butter is completely melted, pour the egg mixture into the frying pan and cook while stirring lightly until it's cooked through.
  10. When the egg mixture starts to set, reduce heat to low and place half of the ketchup rice on the side of the frying pan opposite the handle, beyond the halfway mark.
  11. Fold the back half of the egg over to the front to wrap the ketchup rice.
  12. Turn off the heat, tilt the frying pan, slide the egg off onto a plate.
  13. Decorate with ketchup to complete the classic omurice.
  14. Place the remaining ketchup rice on a plate and shape it.
  15. Heat the frying pan over medium heat, add 1/2 tsp vegetable oil, and once heated, add 1.5 tbsp butter and melt.
  16. Once the butter is melted, pour in the egg mixture (same as for the classic omurice) and mix roughly with chopsticks.
  17. Turn off the heat when it reaches your desired consistency.
  18. Tilt the frying pan and slide the fluffy, melty egg over the ketchup rice on the plate.
  19. Decorate with ketchup to complete the fluffy and melty omurice.
