This recipe creates incredibly juicy and delicious menchi katsu, bulked up with bean sprouts. Using affordable bean sprouts generously, you can make a filling dish while saving money. It's perfect for bento boxes and offers a delightful crunchy texture from the bean sprouts.

Ingredients

Main Ingredients (Serves 2 (4 patties))

  • Bean Sprouts 1 bag (200g)
  • Ground Pork 150g
  • Egg 1
  • All-Purpose Flour 2 tbsp
  • Panko Breadcrumbs (to taste)
  • Frying Oil (for deep frying)
  • All-Purpose Flour (for coating)

Seasonings

  • Cooking Sake (Rice Wine) 1 tbsp
  • Granulated Consommé 1 tsp
  • Salt 1/4 tsp

Steps

  1. Lightly beat 1 egg.
  2. In a bowl, combine 150g ground pork, 1 tbsp cooking sake, 1 tsp granulated consommé, 1/4 tsp salt, and half of the beaten egg.
  3. Knead well until sticky.
  4. Rinse 1 bag (200g) bean sprouts quickly under water and drain well in a colander.
  5. Grab the bean sprouts with your hands and break them into small pieces, about 5mm to 1cm wide.
  6. Squeeze out the water from the broken bean sprouts firmly with your hands. (Key Tip!) Excess moisture from the bean sprouts will make the meat mixture sticky, so squeezing out the water thoroughly is crucial.
  7. Add the squeezed bean sprouts to the bowl with the meat mixture and mix well.
  8. Add 2 tbsp all-purpose flour to the bowl and mix until the ingredients come together.
  9. Spread all-purpose flour on a tray or flat plate.
  10. Divide the combined meat mixture into 4 equal portions and place them on the flour.
  11. While coating with all-purpose flour, shape them into oval patties. (Key Tip!) Coating with all-purpose flour while shaping makes the meat mixture less sticky to your hands, allowing for efficient work.
  12. Spread panko breadcrumbs on another tray or flat plate.
  13. Dip the meat patties into the remaining half of the beaten egg.
  14. Coat the egg-dipped meat patties with panko breadcrumbs.
  15. Heat frying oil to medium heat in a frying pan to a depth of about 1-2 cm.
  16. Place the menchi katsu patties in the hot oil. Fry one side for about 3 minutes until golden brown, then flip.
  17. Fry the other side for about 3 minutes as well. (Key Tip!) Bean sprouts contain a lot of moisture, so be careful not to burn them. Cook thoroughly for a total of approximately 6 minutes.
  18. Once golden brown all over, remove from the oil and drain excess oil.
  19. Let the fried menchi katsu rest for about 5 minutes to cook through with residual heat. (Key Tip!) Cooking with residual heat ensures they are safely cooked and delicious.
  20. Cook the remaining menchi katsu patties in the same manner.
  21. Serve on a plate and enjoy.
