This recipe for bitter gourd stir-fry is incredibly delicious with just mixing and baking. We'll pre-treat the bitter gourd to reduce its bitterness, then bake it fragrantly with sausages, eggs, and wheat flour. This nutritious dish is perfect for summer and enjoyable for the whole family.

- Bitter Gourd 1/2 pc (130g)
- Sausages 3 pcs
- All-purpose Flour 2 tbsp
- Egg 1 pc
Seasonings
- [A] Sugar 1 tsp
- [A] Salt 1/4 tsp
- [B] Salt a pinch
- [B] Pepper a pinch
- Water 1 tbsp
- Vegetable Oil for cooking
Steps
- Cut Bitter Gourd (1/2 pc) in half lengthwise and scoop out the pith and seeds with a spoon.
- Slice the bitter gourd thinly to about 3mm width.
- Sprinkle Sugar (1 tsp) and Salt (1/4 tsp) onto the sliced bitter gourd and let it sit for 10 minutes. [Key Tip!] This step of rubbing with salt and sugar helps to remove the bitterness and astringency of the bitter gourd.
- Cut Sausages (3 pcs) in half lengthwise, then diagonally into thin strips.
- Rinse the bitter gourd that has sat for 10 minutes under water and squeeze out the moisture firmly by hand.
- Place the squeezed bitter gourd in a bowl, add the sliced sausages, All-purpose Flour (2 tbsp), Salt (a pinch), and Pepper (a pinch). Shake the bowl to evenly coat everything with the flour.
- In a separate bowl, combine Egg (1 pc) and Water (1 tbsp), and whisk together.
- Pour the egg mixture into the bowl with the bitter gourd and sausages, and mix until the egg evenly coats all the ingredients.
- Heat Vegetable Oil (for cooking) in a frying pan over medium heat.
- Spread the mixture of ingredients and egg onto the heated frying pan, forming a circle about 5mm thick and 22cm in diameter. Cook over medium heat until the bottom is browned. [Key Tip!] If it's too thick, the bitterness can be more noticeable, so spread it thinly before cooking.
- Once the bottom is browned, carefully transfer the disk to a plate.
- Cover the plate with the frying pan (with residual oil) and flip the bitter gourd disk onto the pan. Reshape it and cook the other side until browned.
- Once both sides are browned, transfer to a cutting board, cut into bite-sized pieces, and arrange on a plate. [Key Tip!] Serve with your favorite sauce, ketchup, or mayonnaise.
