A simple recipe for "Addictive Marinated Cabbage" using plenty of seasonal cabbage. Just salt it and marinate it in seasonings for an easy and delicious dish. Ingredients
Main Ingredients (2-3 servings)
- 1/4 Cabbage (250g)
- 1/4 Carrot (50g)
- 1 Cucumber (100g)
Seasonings
- Salt 1/2 tsp
- [A] Salted Kombu 10g
- [A] Vinegar 2 tsp
- [A] Sesame Oil 2 tsp
- [A] Sugar 1 tsp
- [A] Toasted Sesame Seeds 1 tbsp
Steps
- Cut the core out of 1/4 Cabbage (250g) and chop into bite-sized pieces.
- Peel 1/4 Carrot (50g) and julienne it.
- Rub the bumpy skin of 1 Cucumber (100g) with the back of a knife and slice thinly.
- Place the chopped cabbage, carrot, and cucumber into a plastic bag.
- Add 1/2 tsp salt to the plastic bag, close the opening, and massage the vegetables until they become tender.
- Once the salt is evenly distributed and the vegetables have softened, remove excess air from the bag, seal it, and let it sit for about 15 minutes.
- After 15 minutes, the vegetables will be even more tender and have released moisture. Squeeze out the excess water firmly by hand, then transfer the vegetables to a bowl.
- Add 10g Salted Kombu, 2 tsp Vinegar, 2 tsp Sesame Oil, 1 tsp Sugar, and 1 tbsp Toasted Sesame Seeds to the squeezed vegetables and mix well.
- Taste and adjust seasoning with salt if it feels too bland.
- Mix everything thoroughly. You can eat it immediately.
- For the flavors to meld better, let it marinate for about 5 minutes before eating for an even more delicious result. [Key Tip!] Marinating for 5 minutes allows the flavors to fully integrate and become more delicious.
