Ingredients

Main Ingredients (2 servings)

  • Grated Yam 200g
  • Scallions 1/2 bunch (50g)
  • Egg 1
  • Potato Starch 2 tbsp

Seasonings

  • Dashi Powder 1 tsp
  • Soy Sauce 1 tsp
  • Sugar 1 tsp
  • Vegetable Oil (for cooking)

Steps

  1. Remove the fibrous roots from 200g of grated yam and grate it.
  2. In a bowl, whisk 1 egg, then mix in 1 tsp dashi powder, 1 tsp soy sauce, 1 tsp sugar, and 2 tbsp potato starch.
  3. Finely chop 1/2 bunch (50g) of scallions into 3-5mm pieces.
  4. Add the chopped scallions and all the seasonings to the bowl with the grated yam, and mix well.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Once the pan is hot, scoop the batter with a spoon and pour it into the pan, forming flat circles. (Key Tip!) The batter is quite loose and tends to spread easily. Once the bottom starts to firm up, pour more batter on top to build thickness.
  7. Once the bottom is browned, flip the pancake. (Key Tip!) Using the side of the frying pan will make it easier to flip.
  8. Once browned on both sides, transfer to a plate.
  9. Cook the remaining batter in the same way.
  10. They are delicious as is, but if you prefer a stronger flavor, serve with your favorite dipping sauce. Wasabi soy sauce or a versatile soy sauce are highly recommended.
