Learn how to make homemade frozen pasta and two delicious variations: Japanese-style mushroom pasta and mentsuyu butter pasta. By boiling and freezing pasta in batches, you can enjoy authentic pasta in minutes by simply microwaving it when you crave it. This is a perfect, easy, and delicious pasta recipe for busy days and meal prepping.

Ingredients

Main Ingredients (6 servings of frozen pasta, 1 serving each of the Japanese-style pasta)

  • Pasta noodles 420g
  • Onion 1
  • Shimeji mushrooms 1 bunch
  • Chicken thigh 50g
  • King oyster mushroom 1
  • Frozen spinach 50g
  • Bacon 2 slices
  • Green onions, chopped, a little

Seasonings

  • Salt, to taste
  • Olive oil, to taste
  • [A] Olive oil 2 tsp
  • [A] Grated garlic 1/2 tsp
  • [A] Dried Matsutake mushroom soup mix 1 sachet
  • [B] Butter 10g
  • [B] Grated garlic 1/2 tsp
  • [B] Mentsuyu (Double Concentrated) 2 tbsp

Steps

  1. Peel and thinly slice 1 onion.
  2. Trim the base of 1 bunch of shimeji mushrooms and separate them into bite-sized pieces.
  3. Bring water to a boil, add salt to taste, and boil 420g of pasta noodles.
  4. Cook for 1 minute 30 seconds less than the package directions, to al dente. Drain and rinse with cold water.
  5. Let the pasta cool and drain thoroughly.
  6. Drizzle olive oil to taste over the drained pasta and toss to coat.
  7. Line a bowl with plastic wrap and divide the cooked pasta into 6 portions, placing each portion onto the wrap.
  8. Divide the sliced onion into 6 portions and place on top of the pasta.
  9. Divide the shimeji mushrooms into 6 portions and place on top of the pasta.
  10. Fold the plastic wrap over the ingredients to enclose them, then remove from the bowl.
  11. If necessary, re-wrap and place into a freezer bag, removing as much air as possible before sealing. (This is key!) To prevent freezer burn, consume within 3 weeks to 1 month.
  12. Remove the plastic wrap from 1 frozen pasta portion and place into a microwave-safe dish.
  13. Cut 50g of chicken thigh into bite-sized pieces and add to the dish.
  14. Slice 1 king oyster mushroom and add to the dish.
  15. Loosely cover with plastic wrap and microwave on 600W for 5 minutes 30 seconds.
  16. Stir the ingredients to ensure everything is evenly heated and the pasta is thawed and the chicken is cooked through.
  17. Add 2 tsp olive oil, 1/2 tsp grated garlic, and 1 sachet of dried Matsutake mushroom soup mix. Mix well.
  18. Plate and sprinkle with chopped green onions.
  19. Place 1 frozen pasta portion into a microwave-safe dish.
  20. Add 50g of frozen spinach and 2 slices of bacon, cut into bite-sized pieces, to the dish.
  21. Loosely cover with plastic wrap and microwave on 600W for 5 minutes 30 seconds.
  22. Once heated through, add 10g of butter, 1/2 tsp grated garlic, and 2 tbsp of mentsuyu (double concentrated). Stir to combine while the butter melts from the residual heat.
  23. Plate and serve.
