A nostalgic "Ham & Potato Golden Bake" made by simply wrapping mashed potatoes with ham, coating it, and frying. This is our family's go-to recipe that's surprisingly delicious, perfect for a side dish, bento lunch, or snack.
Ingredients
Main Ingredients (2 servings)
- Ham 7 slices
- Potato 1 (approx. 150g)
- All-purpose flour (for coating) as needed
- Beaten egg 1
Seasonings
- Mayonnaise 1 tbsp
- Salt to taste
- Coarsely ground black pepper to taste
- Dried parsley (for garnish) a pinch
- Vegetable oil (for frying) as needed
Steps
- Peel potato (approx. 150g) and remove any sprouts.
- Cut the potato into bite-sized pieces, place in a microwave-safe container, cover with plastic wrap, and microwave at 600W for 3 minutes.
- Add mayonnaise (1 tbsp) to the potato that has softened enough for a fork to easily pierce it, and mash with a fork or masher. (Key Tip!) If the potato is difficult to mash, add a small amount of water as needed to bind it.
- Add salt (to taste), and optionally coarsely ground black pepper (to taste) and dried parsley (a pinch) to the mashed potato, and mix well. (Key Tip!) You can also enjoy variations by adding curry powder.
- Place the mashed potato mixture onto the upper half of a ham slice and fold the ham in half.
- Cut the ham with the enclosed potato in half at the center.
- Lightly coat the cut surface of the ham with all-purpose flour (as needed).
- Heat vegetable oil (as needed) in a frying pan.
- Dip the ham coated with all-purpose flour into the beaten egg (1 egg) and arrange in the heated frying pan.
- Heat over medium heat and flip pieces once they start to brown.
- Fry the remaining portions similarly. Re-dipping the already fried pieces in beaten egg and frying again will result in a fluffy coating.
- Once golden brown on both sides, it's done. Remove from the frying pan.
- Sprinkle the finished Ham & Potato Golden Bake with dried parsley (a pinch) for color and serve with ketchup or your favorite condiments.
