These easy-to-make onion mini buns use hotcake mix for a quick treat. Packed with fresh new onions, they turn out fluffy without any proofing. Simply mix and bake, making them a fun recipe to enjoy with kids. Perfect as a savory snack or a light meal.
Ingredients
Main Ingredients (6 buns)
- 1/2 onion (120g)
- 50g whole corn
- 2 sausages
- 1 egg
- 50ml milk
- 100g hotcake mix
- 30g mixed cheese
Seasonings
- [A] Salt and pepper to taste
- Mayonnaise (as needed)
- [B] Light salt and pepper
- Coarse black pepper (optional)
- Dried parsley (optional)
Steps
- Peel 1/2 onion (120g) and remove the ends.
- Thinly slice the onion into about 3mm thick pieces.
- Place the sliced onion in a microwave-safe container and heat on 600W for 1 minute. Let it cool down.
- Crack 1 egg into a bowl, add 50ml milk, and whisk until combined.
- Add 100g hotcake mix and a little salt and pepper, and mix until smooth without lumps.
- Dice 2 sausages into about 3mm cubes.
- To the batter in the bowl, add the diced sausages, 50g whole corn, and the squeezed onion (reserve 1/4 for topping). Mix evenly.
- Preheat your oven to 180℃.
- Line a muffin tin with baking cups to prevent sticking.
- Divide the batter evenly among 6 muffin cups.
- Squeeze out any excess water from the reserved onion and sprinkle it over the batter.
- Lightly sprinkle salt and pepper over the onion.
- Top with about 2 pinches of mixed cheese (approx. 5g each).
- Drizzle mayonnaise over the mixed cheese.
- Sprinkle with coarse black pepper, if desired.
- Place the prepared muffin tin on a baking sheet and bake in the preheated oven for 22 to 25 minutes.
- Remove the baked mini buns from the muffin tin.
