Just mix and microwave! This dish is healthy, flour-free, and surprisingly filling. We'll make an okonomiyaki-style mound tofu cabbage dome using plenty of tofu and cabbage. It's easy to make, budget-friendly, and the crispy texture is utterly addictive. Give this recipe a try!

- Tofu 1/2 block (150g)
- Ground mixed meat 50g
- Cabbage 150g
- Eggs 2
Seasonings
- Dashi powder 1.5 tsp
- Okonomiyaki Sauce
- Mayonnaise
- Bonito Flakes (Katsuobushi)
- Aonori (Dried Green Seaweed)
- Pickled Red Ginger
Steps
- In a bowl, add tofu 1/2 block (150g) and mash into a paste using a whisk. (This is the key!) Both firm or silken tofu work well.
- In a separate bowl, add 2 eggs and dashi powder 1.5 tsp. Whisk until combined.
- Add ground mixed meat 50g to the combined egg mixture and mix until uniform.
- Finely chop cabbage 150g into 5mm to 1cm pieces.
- Add the chopped cabbage to the bowl with the mashed tofu and mix until uniform.
- Line a microwave-safe bowl with plastic wrap and pour in the mixed ingredients.
- Loosely cover with plastic wrap and microwave at 600W for 2 minutes.
- After microwaving, remove the bowl, mix everything, and flatten the surface.
- Loosely cover with plastic wrap again and microwave at 600W for 4 minutes.
- After microwaving, place a plate over the bowl and invert to remove the dome-shaped tofu and cabbage. (This is the key!) Lining the bowl with plastic wrap allows for easy removal without sticking.
- Top the removed tofu cabbage dome with Okonomiyaki Sauce, Mayonnaise, Bonito Flakes (Katsuobushi), Aonori (Dried Green Seaweed), and Pickled Red Ginger, if desired.
- (This is the key!) Mashing the tofu into a paste and combining it with eggs allows the mixture to bind well without flour, resulting in a beautiful shape.
- (This is the key!) Adding a small amount of ground meat adds umami. If you prefer a lighter taste, you can substitute with ground chicken or a can of tuna.
