No need for glutinous rice or a steamer! Make chewy okowa grilled onigiri easily in your rice cooker. The savory grilled crust and sesame oil aroma will whet your appetite, and adding cheese is also exquisite. This simple recipe is perfect for bento boxes and meal prep.

Ingredients

Main Ingredients (For 2 servings (7-8 rice balls))

  • Rice 2 cups (300g)
  • Mochi (Rice Cake) 1 piece
  • Cheese (optional)

Seasonings

  • [A] Soy Sauce 2 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Dashi granules 1 tsp
  • Sesame Oil 1/2 tbsp

Steps

  1. Finely chop 1 piece of Mochi (Rice Cake) into 8 equal pieces.
  2. Wash 2 cups (300g) of Rice and drain thoroughly in a colander.
  3. Place the drained rice in the rice cooker pot, and add 2 tbsp of Soy Sauce, 2 tbsp of Mirin (Sweet Rice Wine), and 1 tsp of Dashi granules.
  4. Add water up to the 2-cup cooking line, mix everything, and level the rice.
  5. Place the chopped mochi on top of the rice, and cook using the regular white rice setting.
  6. Once cooked, add 1/2 tbsp of Sesame Oil and mix well. [Key Tip!] Mix by cutting the rice to ensure the mochi is distributed throughout, creating a chewy texture.
  7. Shape the cooked rice into triangles. Firmly press to prevent them from falling apart during grilling.
  8. For cheese grilled onigiri, add chopped cheese (optional) to the center and shape.
  9. Sprinkle toasted sesame seeds for decoration. (Optional)
  10. Lightly oil a frying pan and heat over medium to medium-high heat.
  11. Remove the plastic wrap from the shaped onigiri and place them in the frying pan.
  12. Flip occasionally and grill until both sides have a nice browned crust.
  13. Stand the onigiri up and grill the sides thoroughly until browned.
  14. Once evenly browned, they are ready. Transfer to a plate.
