Seasonings

  • Salt
  • Pepper
  • All-purpose Flour
  • Olive Oil
  • Butter
  • White Wine
  • Heavy Cream

Steps

  1. Remove the core from the broccoli and cut the florets into bite-sized pieces.
  2. Add a small amount of water to a pot, add the separated broccoli, and sprinkle with a pinch of salt. Cover and steam-dry for 5 minutes. [Key Tip!] Steaming without water helps retain nutrients and umami.
  3. Season the thinly sliced pork loin with a pinch of salt and pepper.
  4. Lightly coat the pork with all-purpose flour, shaking off any excess.
  5. Heat a small amount of olive oil and butter in a frying pan. Add the pork and sear lightly on both sides until golden brown.
  6. Remove the seared pork and wipe any excess oil from the pan with a paper towel.
  7. Add a small amount of white wine to the pan.
  8. Add approximately 40g of Gorgonzola cheese and heavy cream to the pan. Stir until the cheese melts from the residual heat.
  9. In a separate pan, lightly stir-fry the steamed broccoli with a small amount of butter.
  10. Taste the sauce and adjust seasoning to your preference.
  11. Return the pork to the sauce and coat evenly.
  12. Plate the dish, serve with the stir-fried broccoli, and enjoy!
