- All-purpose Flour
- Olive Oil
- Butter
- White Wine
- Heavy Cream
Steps
- Remove the core from the broccoli and cut the florets into bite-sized pieces.
- Add a small amount of water to a pot, add the separated broccoli, and sprinkle with a pinch of salt. Cover and steam-dry for 5 minutes. [Key Tip!] Steaming without water helps retain nutrients and umami.
- Season the thinly sliced pork loin with a pinch of salt and pepper.
- Lightly coat the pork with all-purpose flour, shaking off any excess.
- Heat a small amount of olive oil and butter in a frying pan. Add the pork and sear lightly on both sides until golden brown.
- Remove the seared pork and wipe any excess oil from the pan with a paper towel.
- Add a small amount of white wine to the pan.
- Add approximately 40g of Gorgonzola cheese and heavy cream to the pan. Stir until the cheese melts from the residual heat.
- In a separate pan, lightly stir-fry the steamed broccoli with a small amount of butter.
- Taste the sauce and adjust seasoning to your preference.
- Return the pork to the sauce and coat evenly.
- Plate the dish, serve with the stir-fried broccoli, and enjoy!
