Introducing Riso, an Italian dish made with rice, that you can prepare in just one pot with plenty of ingredients. This simple recipe uses plenty of summer vegetables and requires only boiling and mixing. Try this unique take on risotto at home!
Ingredients
Main Ingredients (4-6 servings)
- Rice 360g
- Potato 1 pc
- Green Beans 10 pcs
- Broad Beans 4 pods
- Zucchini 1/2 pc
- Eggplant 2 pcs
- Bitter Melon 1/2 pc
- Lettuce (to taste)
- Tomatoes 2 pcs
- Canned Tuna 100g
- Okra (to taste)
Seasonings
- Olive Oil (to taste)
- Salt (to taste)
- Black Pepper (to taste)
- Wine Vinegar or Vinegar (to taste)
- Parmesan Cheese (to taste)
Steps
- Peel and dice 1 potato into bite-sized pieces, then soak in water.
- Slice 1/2 zucchini into rounds or half-moons.
- Shell 4 pods of broad beans and peel off the thin outer skin.
- Trim the tops and bottoms of okra (to taste) and cut into bite-sized pieces.
- Remove the seeds and pith from 1/2 bitter melon and cut into bite-sized pieces.
- Cut 2 eggplants into irregular chunks and soak in water.
- Tear lettuce (to taste) into pieces and cut 2 tomatoes into wedges or bite-sized pieces.
- Bring a large pot of water to a boil, add a pinch of salt, and add 360g of uncooked rice.
- Stir the rice over high heat to prevent sticking to the bottom of the pot. Once the rice floats to the surface, let it boil for a total of 13 minutes.
- 2 minutes after starting to boil the rice, add 1 potato (drained) and boil together.
- 6 minutes before the rice is done boiling, add drained 10 green beans, 1/2 zucchini, 1/2 bitter melon, and 2 eggplants.
- 3 minutes before the rice is done boiling, add okra (to taste) and the peeled 4 broad beans.
- In a large bowl, combine the cut 2 tomatoes and 100g of canned tuna (drained). (This is the key!) Tuna can be substituted with canned mackerel, ham, or vegetables only.
- Just before the rice is finished boiling, add the torn lettuce (to taste) to the pot, mix briefly, and immediately turn off the heat.
- Drain the boiled rice and vegetables in a colander and transfer them to the bowl from step 13.
- Mix the rice, vegetables, tomatoes, and tuna in the bowl thoroughly.
- Taste and add salt (to taste) if needed, then drizzle with olive oil (to taste).
- For a touch of acidity, add wine vinegar or vinegar (to taste) as desired. Mix everything together briefly. It's ready!
- For an extra touch, we recommend topping with Parmesan cheese (to taste), black pepper (to taste), and a drizzle of olive oil (to taste).
