A perfect dish for hot weather when your appetite tends to drop, this "Saliva Chicken" avocado salad is spicy and tangy. It's an innovative dish featuring a simple sauce made with ground chicken, drizzled over avocado and mozzarella cheese. This sauce can also be used with cucumbers or chilled tofu, making it an ideal appetizer with drinks.

Ingredients

Main Ingredients (2 servings)

  • Ground Chicken 50g
  • Avocado 1
  • Mozzarella Cheese 1
  • Scallions (minced) 1 tbsp
  • Ginger (minced) 1 tsp
  • Garlic (minced) 1 tsp
  • Toasted Sesame Seeds 1 tsp

Seasonings

  • White Sesame Oil 2 tbsp
  • Doubanjiang (Spicy Bean Paste) 1/3 tsp
  • [A] Shaoxing Wine 2 tbsp
  • [A] Soy Sauce 2 tbsp
  • [A] Pepper a pinch
  • [A] Sugar a pinch
  • [A] Vinegar 1 tsp
  • [A] Chili Oil 2 tbsp
  • Sesame Oil 1 tbsp

Steps

  1. Cut the avocado in half and remove the pit.
  2. Slice the avocado and mozzarella cheese to about 5mm thickness.
  3. Arrange the sliced avocado and mozzarella cheese on a plate.
  4. Heat 2 tbsp of White Sesame Oil in a frying pan over low heat.
  5. Add 1 tbsp of minced scallions to the pan and sauté until fragrant.
  6. Add 1 tsp of minced ginger and 1 tsp of minced garlic, and sauté until fragrant.
  7. Add 50g of ground chicken and slowly cook over low heat until the color changes. (Key Tip!) If the heat is too high, the chicken will become tough, so cook it carefully over low heat.
  8. Move the ground chicken to the center of the pan, and add 1/3 tsp of Doubanjiang to the empty space. Sauté until fragrant.
  9. Mix the doubanjiang and ground chicken together thoroughly.
  10. Add 2 tbsp of Shaoxing Wine, 2 tbsp of Soy Sauce, a pinch of Pepper, a pinch of Sugar, 1 tsp of Vinegar, and 2 tbsp of Chili Oil. Mix well.
  11. Turn off the heat.
  12. Add 1 tbsp of Sesame Oil and mix everything together.
  13. Add 1 tsp of toasted sesame seeds and mix to complete the sauce.
  14. Generously pour the prepared Saliva Chicken sauce over the avocado and mozzarella cheese arranged on the plate. It's done!
