This exquisite pho is packed with the rich flavors of clams and ground meat. Its best feature is how easy it is to make in just one pot. Simmering thoroughly allows the noodles to absorb the flavors, and the fragrant cilantro with savory scrambled eggs will whet your appetite.
Ingredients
Main Ingredients (2 servings)
- Pho Noodles 140g
- Eggs 2
- Ground Meat 50g
- Clams 300g
- Scallions (thinly sliced) 20g
- Ginger (thinly sliced) 5g
- Garlic (thinly sliced) 5g
- Cilantro (to taste)
Seasonings
- [A] Chicken Bouillon Powder 1/2 tsp
- [B] Premium Sesame Oil 1 tbsp
- [C] Cooking Sake (Rice Wine) 2 tbsp
- [D] Salt 1 and 1/2 tsp
- [D] Pepper A pinch
- [E] Soy Sauce A dash
- [F] Sesame Oil 1 tbsp
Steps
- Beat 2 eggs in a bowl and mix in 1/2 tsp Chicken Bouillon Powder. Heat 1 tbsp Premium Sesame Oil in a pot, scramble the egg mixture to make scrambled eggs, and set aside on a plate. Reserve 1/3 of the scrambled eggs for garnish.
- In the same pot, add 50g Ground Meat and cook until it changes color. Add the thinly sliced 20g Scallions, 5g Ginger, and 5g Garlic and stir-fry further.
- Add 2 tbsp Cooking Sake (Rice Wine) and 1 liter Water and bring to a boil. Season with 1 and 1/2 tsp Salt and A pinch of Pepper, then add 140g Pho Noodles and simmer for 5 minutes with the lid on.
- Add 300g Clams and cook until the clams open. Adjust the seasoning with Salt and Pepper to achieve a slightly richer flavor than clear soup.
- Drizzle in A dash of Soy Sauce, add the remaining scrambled eggs and mix. Finally, drizzle in 1 tbsp Sesame Oil.
- Ladle into serving bowls and garnish with the reserved scrambled eggs and Cilantro (to taste). Serve.
