Authentic Chinese Hamburg steak taught by Chef Wakiya. Juicy hamburg made with a blend of beef and pork mince, perfectly coated with a special sauce infused with black pepper. This easy recipe is also perfect for lunchboxes and will delight the whole family.

Ingredients

Main Ingredients (2 servings)

  • Ground Beef 200g
  • Ground Pork 50g
  • White Bread 1/2 slice
  • Milk 2 tbsp
  • Egg 1/2

Seasonings

  • Ginger (minced) 1/2 tsp
  • Taihaku Sesame Oil 1 tbsp
  • Salt 1/2 tsp
  • Black Pepper A pinch
  • Soy Sauce A pinch
  • [A] Green Onion (minced) 1 tbsp
  • [A] Ginger (minced) 1 tsp
  • [A] Garlic (minced) 1 tsp
  • [A] Butter 1 tbsp
  • [A] Coarsely Ground Black Pepper 1 tsp
  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Soy Sauce 1 tbsp
  • [A] Chicken Stock 5 tbsp
  • [A] White Pepper A pinch
  • [A] Sugar A pinch
  • [A] Potato Starch 1 tsp
  • [A] Sesame Oil 1 tbsp

Steps

  1. Place Ground Beef 200g and Ground Pork 50g in a bowl.
  2. Add White Bread 1/2 slice and Milk 2 tbsp, then mix by kneading with your hands.
  3. Add 1/2 beaten egg and knead until well combined.
  4. Add Salt 1/2 tsp, Black Pepper a pinch, minced Ginger 1/2 tsp, and Soy Sauce a pinch, then mix well.
  5. If the mixture becomes stiff, gradually add Water 3-5 tbsp, mixing until sticky and elastic.
  6. Lightly drizzle Taihaku Sesame Oil 1 tbsp and mix evenly.
  7. Roll the mixed dough into ping-pong ball sized portions. Use your fingertips to roll them into perfectly round shapes.
  8. Warm a frying pan over low heat.
  9. Place the formed hamburg steaks in the pan and gently press them flat with the back of a spoon.
  10. Cook slowly over low heat until both sides are golden brown.
  11. While the hamburg steaks are cooking, melt Butter 1 tbsp in a small pot to make the sauce.
  12. Once the butter has melted and is bubbling, add minced Green Onion 1 tbsp, minced Ginger 1 tsp, minced Garlic 1 tsp, and Coarsely Ground Black Pepper 1 tsp and sauté.
  13. Add Cooking Sake (Rice Wine) 1 tbsp, Soy Sauce 1 tbsp, Chicken Stock 5 tbsp, White Pepper a pinch, and Sugar a pinch to the sautéed aromatics and bring to a boil.
  14. Thicken the boiling sauce by adding 1 tsp Potato Starch mixed with water.
  15. Finish by drizzling in Sesame Oil 1 tbsp.
  16. Arrange the cooked hamburg steaks on a plate and generously pour the black pepper sauce over them.
  17. Garnish with seasonal green vegetables like fava beans if desired. Serve and enjoy!
