A recipe for addictive green onion somen noodles from culinary researcher Yukari. A superb arranged somen dish that's easy to make with few ingredients and so delicious you won't be able to stop eating it. Experience simple umami that you'll want to eat every single day.

Main Ingredients (1 serving)
- Somen noodles 100g
- Green onion 30g
Seasonings
- [A] Water 300ml
- [A] Chicken stock granules 2 tsp
- [A] Dashi powder 1/2 tsp
- [A] Soy sauce 1 tsp
- [A] Sugar 1/2 tsp
- [A] Grated garlic 1/2 tsp
- [A] Sesame oil 1/2 tbsp
- [A] Toasted sesame seeds 1 tsp
- Black pepper (to taste)
Steps
- Finely chop 30g of green onion.
- Place the chopped green onion into a bowl.
- Add 300ml of water, 1/2 tsp of grated garlic, 2 tsp of chicken stock granules, 1 tsp of soy sauce, 1/2 tsp of sugar, 1/2 tsp of dashi powder, 1/2 tbsp of sesame oil, and 1 tsp of toasted sesame seeds to the bowl. Mix well until the sugar, chicken stock granules, and dashi powder are dissolved.
- Chill the prepared green onion soup in the refrigerator until ready to use. (Key Tip!) If the chicken stock granules are difficult to dissolve, dissolve them in a small amount of water, heat gently in the microwave, and then add.
- Fill a pot with plenty of water and bring to a boil.
- Add 100g of somen noodles to the boiling water, separating them as you add. Cook to your desired firmness.
- Drain the cooked somen noodles and immediately rinse thoroughly under cold running water, rubbing to remove any sliminess, then chill. (Key Tip!) Rinsing under cold water makes the somen noodles firm and prevents them from sticking.
- Add the prepared somen noodles to the bowl of chilled green onion soup and mix well.
- Serve in a bowl.
- Sprinkle with black pepper, if desired.
