An addictive recipe for crispy sweet potato fries made easily without frying. They have a crispy exterior and a moist interior. The addition of black sesame seeds makes them so delicious you can't stop eating them. We'll also share tips to avoid failure!
Ingredients
Main Ingredients (Serves 2-3)
- 1 Sweet Potato (approx. 450g)
Seasonings
- Sugar 6 tbsp
- Water 2 tbsp
- Black Sesame Seeds 1/2 tbsp
- Vegetable Oil 1.5 tbsp
Steps
- Wash the sweet potato and lightly pat it dry.
- Cut off both ends of the sweet potato.
- Slice the sweet potato into rounds approximately 1cm thick. (Key Tip!) Be very careful not to cut yourself as sweet potatoes can be hard.
- Cut the sliced sweet potato into 1cm cubes.
- Place the cut sweet potato cubes into a bowl of water. Soak them immediately to prevent discoloration.
- Let the sweet potato soak in water for about 3 minutes to remove excess starch.
- Thoroughly drain the water from the soaked sweet potato.
- Lightly cover the drained sweet potato with plastic wrap, leaving one small opening for steam to escape.
- Microwave on 600W for 3 minutes. (For 500W, add 10-20 seconds).
- After microwaving, remove the wrap slightly, mix the pieces, re-cover with wrap, and microwave again on 600W for 1 minute. (Key Tip!) To prevent uneven cooking, take it out once to mix before reheating.
- After microwaving, remove the wrap and wipe away any accumulated moisture from the bottom. Be careful of burns and lightly pat the sweet potato dry.
- Heat 1.5 tbsp Vegetable Oil in a frying pan over medium heat for about 30 seconds.
- Add all the sweet potato pieces to the warmed pan, spreading them out so they don't overlap too much.
- Fry without stirring for about 2.5 minutes. Then, flip the pieces and continue to fry, tossing them around to avoid burning, for a total of about 5 minutes. (Key Tip!) Frying the surface will help them hold their shape better and enhance their sweetness.
- Turn off the heat. Remove the sweet potato pieces that have developed a light golden brown color in spots.
- Let the frying pan cool down completely.
- Add 6 tbsp Sugar and 2 tbsp Water to the cooled frying pan.
- Heat over medium heat, stirring constantly to prevent burning. (Key Tip!) Stirring continuously is crucial to promote crystallization.
- Cook for about 1 minute until it starts to bubble and the sugar crystals around the edge of the pan turn whitish. Turn off the heat. (Approximately 2 minutes from when you started heating).
- While the heat is off, add the fried sweet potato pieces and 1/2 tbsp Black Sesame Seeds, and toss to coat everything with the sugar syrup.
- Once coated, return the pan to medium heat and gently stir to evaporate the moisture. Be careful not to overcook, as it can caramelize. (Key Tip!) Properly evaporating the moisture is essential for crystallization. Mix gently so the sweet potatoes don't break apart.
- Continue cooking for about 2 minutes after returning to medium heat. Turn off the heat when most of the moisture has evaporated from the pan. Adjust cooking time based on your environment.
- With the heat off, continue to gently mix until the coating crystallizes and becomes crispy. (Key Tip!) Crystallization progresses gradually as you stir after turning off the heat.
- If it's still sticky and not crystallized enough, return to medium heat to evaporate more moisture, then turn off the heat and stir. Repeat this process. They are done when the surface turns whitish and crispy.
