Simply mix and pan-fry chicken thighs and green onions! This juicy and flavorful 'Pan-Fried Chicken with Scallions' is incredibly satisfying while being budget-friendly and voluminous. It's a simple recipe that pairs well with rice and is perfect as a snack, enjoyed by the whole family.

Main Ingredients (2 servings)
- Chicken Thighs 1 piece (approx. 250g)
- Green Scallions (green parts only) 1/2 stalk (approx. 60g)
- Egg 1
- Potato Starch 2 tbsp
Seasonings
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Dashi Powder 1 tsp
- [A] Soy Sauce 1 tsp
- [A] Sugar 1 tsp
Steps
- Prepare 1 chicken thigh (approx. 250g).
- Remove the skin from the chicken thigh and slice it open into two pieces.
- Cut the opened chicken thigh into pieces about 1cm cubes.
- Finely chop the removed chicken skin. You can omit this if you dislike it.
- Place the chopped chicken and chicken skin into a bowl.
- Add 1 tbsp Cooking Sake (Rice Wine), 1 tsp Dashi Powder, 1 tsp Soy Sauce, and 1 tsp Sugar to the bowl and mix the seasonings into the chicken.
- Let the chicken marinate for about 10 minutes.
- Prepare 1/2 stalk (approx. 60g) of the green parts of the green scallions.
- Slice the green scallions into rings about 2-3mm thick.
- Add 1 beaten egg to the marinated chicken and mix well.
- Add another 2 tbsp Potato Starch and mix until evenly combined. [Key Tip!] Adding egg and potato starch will make the chicken thighs moist and tender.
- Add the chopped green scallions and mix.
- Lightly oil a frying pan and heat over medium heat.
- Once the pan is hot, scoop portions of the mixed chicken and scallion mixture with a spoon and place them in the pan, forming flat circles.
- Cook until the bottom is browned.
- Once browned, flip the pieces over.
- Cover the pan and steam-cook over low-medium heat for 2.5 minutes.
- Arrange on a plate.
