Ingredients

Main Ingredients (2 servings)

  • Chicken Thighs 1 piece (approx. 250g)
  • Green Scallions (green parts only) 1/2 stalk (approx. 60g)
  • Egg 1
  • Potato Starch 2 tbsp

Seasonings

  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Dashi Powder 1 tsp
  • [A] Soy Sauce 1 tsp
  • [A] Sugar 1 tsp

Steps

  1. Prepare 1 chicken thigh (approx. 250g).
  2. Remove the skin from the chicken thigh and slice it open into two pieces.
  3. Cut the opened chicken thigh into pieces about 1cm cubes.
  4. Finely chop the removed chicken skin. You can omit this if you dislike it.
  5. Place the chopped chicken and chicken skin into a bowl.
  6. Add 1 tbsp Cooking Sake (Rice Wine), 1 tsp Dashi Powder, 1 tsp Soy Sauce, and 1 tsp Sugar to the bowl and mix the seasonings into the chicken.
  7. Let the chicken marinate for about 10 minutes.
  8. Prepare 1/2 stalk (approx. 60g) of the green parts of the green scallions.
  9. Slice the green scallions into rings about 2-3mm thick.
  10. Add 1 beaten egg to the marinated chicken and mix well.
  11. Add another 2 tbsp Potato Starch and mix until evenly combined. [Key Tip!] Adding egg and potato starch will make the chicken thighs moist and tender.
  12. Add the chopped green scallions and mix.
  13. Lightly oil a frying pan and heat over medium heat.
  14. Once the pan is hot, scoop portions of the mixed chicken and scallion mixture with a spoon and place them in the pan, forming flat circles.
  15. Cook until the bottom is browned.
  16. Once browned, flip the pieces over.
  17. Cover the pan and steam-cook over low-medium heat for 2.5 minutes.
  18. Arrange on a plate.
