Master Italian Chef Hideoka shares his recipe for an exquisite Pescatore. Experience the rich flavor where the umami of seafood melts with the sweetness of tomatoes, easily achieved with a frozen seafood mix. Enjoy this authentic taste at home.
Ingredients
Main Ingredients (2 servings)
- Cherry Tomatoes 1 pack (approx. 200g)
- Frozen Seafood Mix 200g
- Pasta 200g
- Basil 2-3 leaves
- Garlic 1 clove
- Fresh Tomato 1
Seasonings
- Olive Oil 3 tbsp
- Salt (to taste)
- White Wine 50-60ml
- Water (as needed)
Steps
- Add 2 tbsp Olive Oil to a pot.
- Halve the Cherry Tomatoes horizontally.
- Add the cut Cherry Tomatoes to the heated pot.
- Add a little water to the remaining tomatoes at the bottom of the pot and scrape them up.
- Add Basil and season with salt. [Chef's Tip!] Quickly heat to bring out the sweetness of the tomatoes.
- Add the Fresh Tomato to the tomato sauce, briefly simmer, and turn off the heat.
- Cook the Pasta to al dente according to package directions.
- Place the Frozen Seafood Mix in a frying pan, frozen, and heat over medium heat. [Chef's Tip!] Cooking from frozen locks in the seafood's umami for the pasta.
- Once the seafood releases its liquid, add a little Olive Oil to the side of the pan and sauté the Garlic until fragrant.
- Once the garlic is fragrant, toss it with the seafood mix.
- Add 50-60ml White Wine and scrape the bottom of the pot to deglaze while thoroughly cooking off the alcohol.
- Lightly salt the seafood mix.
- Add the seafood mix to the pot with the tomato sauce and simmer briefly.
- Add the cooked Pasta to the frying pan with the sauce.
- Add a little of the Pasta cooking water, mix, and finally add a little Olive Oil to coat everything.
- Plate and enjoy. It's done!
