Easily made with ingredients you have at home, this Tuna Onion Salad, devised by Koutaro Kenzui, is packed with techniques to suppress the onion's spiciness and bring out its sweetness and umami. Ingredients

Main Ingredients (2 servings)

  • 1 Onion
  • 1/2 small can Tuna

Seasonings

  • [A] Mayonnaise 1 tbsp
  • [A] Sugar 1/2 tbsp
  • [A] Sesame Oil 1 tbsp
  • [A] Soy Sauce 2 tbsp
  • [A] Vinegar 1 to 1.5 tbsp
  • Coarse Black Pepper (to taste)

Steps

  1. Cut 1 Onion in half lengthwise.
  2. Grate some of the halved onion. This will be used for the dressing.
  3. Thinly slice the remaining onion against the grain. Key Tip! Slicing against the grain makes the onion less spicy and easier to eat, creating a delicious onion salad.
  4. Soak the thinly sliced onion in a vinegar-water solution with a small amount of water and vinegar to remove spiciness. Key Tip! Soaking in vinegar-water helps to remove the spiciness more quickly.
  5. Place the grated onion in a heatproof container and microwave without covering. Key Tip! Microwaving removes spiciness and enhances sweetness.
  6. Without letting the microwaved grated onion cool down, transfer it to a bowl, add 1 tbsp Mayonnaise and 1/2 tbsp Sugar, and mix well.
  7. Continue by adding 2 tbsp Soy Sauce, 1 to 1.5 tbsp Vinegar, and 1 tbsp Sesame Oil, and mix until the dressing is smooth. Key Tip! Making a larger batch of dressing is convenient as it can be used for other dishes.
  8. Lightly rinse the onion that was soaked in vinegar-water under running water and drain in a colander.
  9. Rub the onion under running water to remove spiciness, and drain thoroughly. Key Tip! Be careful not to over-soak the onion in vinegar-water, as this can diminish its flavor and make it watery.
  10. Further pat dry the drained onion with paper towels.
  11. Arrange the drained onion on a plate.
  12. Add 1/2 small can Tuna on top of the arranged onion.
  13. Lightly mix the onion and tuna on the plate.
  14. Drizzle your desired amount of the prepared dressing over the top.
  15. Finish by generously sprinkling Coarse Black Pepper. Key Tip! Adding chopped herbs like green onions or perilla leaves to your preference will make it even more fragrant.
