Ingredients

Main Ingredients (2 servings)

  • 250g beef
  • 1/2 onion (100g)
  • 1 clove garlic
  • 1 piece ginger
  • Rice to taste
  • Pickled red ginger to taste
  • 1 raw egg

Seasonings

  • [A] 2 tbsp (heaping) granulated sugar
  • [A] 2 tbsp sake
  • [B] 250cc water
  • [B] 3 tbsp soy sauce
  • [B] 1/2 pack Daisho no Dashi Pack (powder)
  • [B] A dash of vinegar

Steps

  1. Peel and cut the onion into large wedges. If using a regular onion, slice thinly.
  2. Slice half a clove of garlic and julienne the ginger with the skin on. Tube ginger and garlic can also be substituted.
  3. Tear open the Daisho no Dashi Pack and use 1/2 pack of the powder. Hondashi can be substituted if unavailable.
  4. Prepare 250g of beef.
  5. Heat a frying pan over medium-low heat, add 2 tbsp of granulated sugar, and slowly melt while caramelizing it. 【This is the key!】 Caramelizing the sugar creates a deep, rich sweetness. Heat over low heat to prevent burning.
  6. Add 2 tbsp of sake.
  7. Once the sugar turns a brownish caramel color, add 250cc of water.
  8. Add 3 tbsp of soy sauce, 1/2 bag of Daisho no Dashi Pack (powder), and a tiny amount of vinegar.
  9. Check the balance of flavors.
  10. Add the chopped ginger, garlic, and onion.
  11. Once it boils and the onions are tender, add the 250g of beef and cook until done.
  12. Use only the yolk of the raw egg.
  13. Once the beef is cooked, place the ingredients on a bowl of rice.
  14. Garnish with pickled red ginger and top with the egg yolk to complete.
