  • Potatoes 230-240g (peeled)
  • Bacon 50g
  • Soy Milk 250ml

Seasonings

  • Butter 10g
  • Consommé 2 tsp
  • Water 100ml
  • Sugar 1/2 tsp
  • Black Pepper to taste
  • Tabasco (for flavor variation)
  • Salt a pinch

Steps

  1. Peel 230-240g of potatoes. 【Tip!】 Peeling them makes for a much more delicious soup, like a potage.
  2. Cut the peeled potatoes in half, then roughly chop them by rotating as you cut.
  3. Place the roughly chopped potatoes in a heat-resistant container, cover with a lid or plastic wrap, and heat in a 600W microwave for 5 minutes.
  4. Cut 50g of bacon into easy-to-eat pieces.
  5. Roughly mash the microwaved potatoes with a fork or similar utensil. 【Tip!】 The key is not to mash them completely, but to leave some small chunks.
  6. Melt 10g of butter in a frying pan, add the chopped bacon, and fry until lightly browned.
  7. Once the bacon is browned, add the mashed potatoes and stir-fry.
  8. Add 2 tsp of consommé, 100ml of water, and 1/2 tsp of sugar, then simmer. 【Tip!】 Adding a small amount of sugar deepens the richness and enhances the umami.
  9. Add 250ml of soy milk and simmer over medium heat for 7-8 minutes. 【Tip!】 Using soy milk allows the soup to thicken when heated, resulting in a creamy texture. If you want a thicker consistency, mash the potatoes further.
  10. Adjust the taste with a pinch of salt. The soup is done when it reaches a consistency slightly looser than stew.
  11. Serve in a bowl and sprinkle with black pepper. You can add Tabasco if desired.
