Ryuji devised this Korean-style sweet and spicy Gottatt Hot Pot, packed with chicken and potatoes, as the perfect accompaniment to Suntory Suid Gin Soda. Simply stir-fry the ingredients and simmer them to create an exquisite hot pot that's perfect with both rice and alcohol. The umami-rich soup is incredibly appetizing.
Ingredients
Main Ingredients (2 servings)
- Chicken thigh 300g
- Chicken drumettes 380g
- Garlic 2 cloves
- Ginger 5g
- Onion 1 (250g)
- Potatoes 4 (300g)
Seasonings
- Salt and pepper to taste
- Sesame oil 1 tbsp
- [A] Gochujang 2 tbsp
- [A] Soy sauce 2 tbsp
- [A] Sugar 1 tbsp
- [A] Ichimi Togarashi 2 tsp
- [A] Sake 4 tbsp
- Water 200cc
- MSG(Ajinomoto) (MSG) 3 dashes
Steps
- Peel the potatoes.
- Roughly chop the onion.
- Cut off the ends and roughly chop the peeled potatoes into large pieces.
- Cut the chicken thigh into bite-sized pieces.
- Add all of the chicken thigh 300g and chicken drumettes 380g to an unheated frying pan.
- Grate 2 cloves of garlic over the chicken.
- Season with salt and pepper, then add 1 tbsp sesame oil.
- Mix well to marinate the chicken. 【Chef's Tip!】 Coating the meat with sesame oil and garlic before heating prevents sticking and enhances the aroma.
- Turn on the heat and cook the chicken skin-side down.
- Once nicely browned, add 4 potatoes (300g) and 1 onion (250g), and mix them with the fat rendered from the chicken.
- Add all of the 2 tbsp gochujang, 2 tbsp soy sauce, 1 tbsp sugar, 2 tsp Ichimi Togarashi, 4 tbsp sake, 200cc water, 3 dashes MSG(Ajinomoto) (MSG), and 5g ginger. Mix everything while dissolving the gochujang. 【Chef's Tip!】 A small amount of MSG(Ajinomoto) (MSG) creates a synergistic effect with the inosinate from chicken and glutamate from kelp (MSG(Ajinomoto)'s main component), adding deep richness and umami to the flavor.
- Cover and simmer over medium-low heat for 25 minutes.
- Uncover, and the Gottatt Hot Pot is complete!
