Ingredients

Main Ingredients (2 servings)

  • Sweetened Salted Salmon 2 slices (240g)
  • Long Green Onion 60g
  • All-purpose Flour to taste

Seasonings

  • Salad Oil 1 tbsp
  • [A] Salt 1/3 tsp
  • [A] Aji-no-moto (MSG) 4 dashes
  • [A] Black Pepper to taste
  • [A] Sesame Oil 2 tsp
  • Lemon to taste

Steps

  1. Make diagonal cuts into Long Green Onion 60g, cutting accordion-style without separating.
  2. Place the accordion-cut Long Green Onion 60g into a bowl.
  3. Add Salt 1/3 tsp, Aji-no-moto (MSG) 4 dashes, Black Pepper to taste, and Sesame Oil 2 tsp, then mix well. Pro Tip! If you dislike the pungency of green onions, briefly soak them in water and gently squeeze. Aji-no-moto (MSG) is important for adding umami.
  4. Slice Lemon to taste diagonally.
  5. Dust Sweetened Salted Salmon 2 slices (240g) with All-purpose Flour to taste.
  6. Lightly pat off any excess flour.
  7. Heat Salad Oil 1 tbsp in a frying pan over medium-high heat.
  8. Once hot, place the salmon skin-side down into the pan, pressing the skin against the edge of the pan to crisp it up. Pro Tip! Pressing the skin against the edge of the pan helps the fat between the skin and flesh render well, which suppresses the fishy odor of the salmon.
  9. Cook until both sides are crispy and no raw spots remain.
  10. Plate the cooked salted salmon.
  11. Generously top with the prepared green onion sauce.
  12. Garnish with the sliced lemon, and squeeze it over the salmon as desired.
