'Shishito Peppers Pickled in Perilla Leaves,' made by stir-frying shishito peppers in a sweet and savory sauce, wrapping them in perilla leaves, and then pickling them, is an exquisite dish that pairs well with both rice and sake. Its compatibility with 'Perilla Rice,' fragrant with perilla leaves and bonito flakes, is outstanding, offering an endless deliciousness that will keep your chopsticks moving.
Ingredients
Main Ingredients (2 servings)
- Shishito peppers 2 packs (150g)
- Perilla leaves 20 sheets
- Cooked rice 200g
- Perilla leaves 10 sheets
Seasonings
- Sesame oil to taste
- [A] Soy sauce 2½ tbsp
- [A] Water 1½ tbsp
- [A] Sugar 1 tsp
- [A] MSG(Ajinomoto) (MSG) 7 shakes
- [A] Ichimi chili powder to taste
- [A] Sesame oil 1 tbsp and 1½ tsp
- Bonito flakes 2 pinches
- Toasted sesame seeds 3 pinches
- Salt 2 pinches
Steps
- Remove the stems from the shishito peppers.
- Add sesame oil to taste to a frying pan and heat it.
- Add the destemmed shishito peppers (2 packs, 150g) and stir-fry.
- Once cooked through and slightly sweet, transfer the stir-fried shishito peppers to a tray and let them cool.
- In a heatproof container, add soy sauce 2½ tbsp, water 1½ tbsp, sugar 1 tsp, MSG(Ajinomoto) (MSG) 7 shakes, and sesame oil 1 tbsp and 1½ tsp.
- Mix until everything is dissolved.
- Cut the large perilla leaves (20 sheets) in half to match the size of the shishito peppers.
- Wrap each cooled shishito pepper with a perilla leaf. No need to secure with a toothpick.
- Place the perilla-wrapped shishito peppers into the pickling liquid, pressing them down so they are fully submerged.
- Finally, add ichimi chili powder to taste and mix.
- Cover and store in the refrigerator.
- Warm the rice.
- Roughly chop the perilla leaves (10 sheets).
- Put the warm cooked rice (200g) into a bowl.
- Add the chopped perilla leaves (10 sheets), bonito flakes (2 pinches), and toasted sesame seeds (3 pinches), then mix while crushing the sesame seeds.
- Add salt (2 pinches) and mix.
- Form the perilla rice into onigiri (rice balls).
