A exquisite onion soup with the concentrated sweetness of slow-cooked onions, just like you'd find in a restaurant. This authentic recipe is easy to make at home and will add a touch of luxury to your everyday meals.

Ingredients

Main Ingredients (2 servings)

  • Onions 3-4
  • Soy Milk 200cc
  • Milk 150cc

Seasonings

  • Water 100cc
  • Salt 1 tsp~
  • Sugar 1 tsp
  • Honey 1 tsp

Steps

  1. Peel and roughly chop 3-4 onions so they cook evenly.
  2. Add all the chopped onions to a pot.
  3. Add 100cc water, 1 tsp salt, and 1 tsp sugar to the pot.
  4. Place the pot over medium heat and bring to a boil while stirring.
  5. Once boiling, reduce heat to low, cover, and simmer slowly for 1 hour. (Key Tip!) Opening the lid and stirring well every 45 minutes ensures even cooking.
  6. After simmering for 1 hour, remove the lid and stir thoroughly with a wooden spoon.
  7. Add 200cc soy milk and bring to a boil over medium heat while stirring.
  8. Once boiling, turn off the heat and blend until smooth using an immersion blender.
  9. Return to medium heat, add 150cc milk, and stir while adjusting the consistency. Be careful of burns.
  10. Taste and adjust the flavor with 1 tsp honey and 2 pinches of salt. (Key Tip!) Adjust saltiness and sweetness by tasting, as the sweetness of the onions can vary.
  11. Bring to a full boil, then turn off the heat. Serve in bowls and enjoy. (Key Tip!) Slow-cooking the onions over low heat maximizes their sweetness and creates a deep, restaurant-quality flavor.
