From Ryuji's Buzz Recipe, the 'Scorched Sausage Peperoncino' is a dish I've been making since my teens. The fragrant aroma and rich umami of the scorched sausages intertwine with the pasta, creating a truly devilishly delicious one-pan pasta. It's a supreme dish that is highly popular, especially among men.
Ingredients
Main Ingredients (1 serving)
- 1.4mm pasta 100g
- Sausages 4
- Garlic 3 cloves
- Red chili pepper 1
Seasonings
- Olive oil 1 tbsp
- Water 330ml
- Salt 1/3 tsp
- MSG(Ajinomoto) (MSG) 4 shakes
- Soy sauce 1/2 tsp
- Olive oil 1/2 tbsp
Steps
- Crush 3 cloves of garlic and mince them. 【Tip!】 The finer you chop, the stronger the aroma. If you prefer a milder aroma, you can leave them crushed.
- Slice 4 sausages diagonally. 【Tip!】 Slicing them diagonally makes it easier for inosinic acid to dissolve from the cut surface.
- Heat 1 tbsp olive oil in a small frying pan.
- Add the sliced sausages to the pan and fry them with the cut side down until browned. 【Tip!】 Frying the sausages first enhances their fragrance and prevents the garlic from burning. It's best to sear the cut surfaces directly on the bottom of the pan.
- Once the sausages are browned, add the minced garlic, reduce the heat, and stir-fry until fragrant.
- When the garlic becomes fragrant, add 1 red chili pepper and stir-fry. 【Tip!】 Be careful as red chili peppers burn more easily than garlic.
- Add 330ml water, 1/3 tsp salt, and 4 shakes of MSG(Ajinomoto) (MSG) to the pan and bring to a boil. 【Tip!】 In one-pan pasta, the noodles absorb the flavor easily, and the sauce enriched with pasta components becomes delicious. The inosinic acid from the sausages and glutamic acid from MSG(Ajinomoto) complement each other for enhanced umami.
- Once boiling, add 100g of 1.4mm pasta, spread it out when it softens, and simmer for 5 minutes until the liquid evaporates.
- Return the sausages to the pan and simmer, mixing them with the pasta. 【Tip!】 Stirring occasionally prevents the noodles from sticking and allows the sausage's umami to soak into the noodles.
- Once the liquid has evaporated and the sauce has thickened, add 1/2 tsp soy sauce and mix. 【Tip!】 Adding soy sauce enhances the compatibility between the scorched sausages and salt.
- Finally, drizzle in 1/2 tbsp olive oil and toss to coat everything, giving it a glossy finish. 【Tip!】 Heated olive oil and unheated olive oil have different aromas, so adding it at the end enhances the flavor.
- Plate the pasta and sprinkle with dried parsley, if desired.
