  • Yam (Nagaimo) 150g
  • Green Onion 1 stalk
  • Potato Starch 2 tbsp
  • Nori (Dried Seaweed) 1 sheet

Seasonings

  • Shiro Dashi (White Soy Sauce Base) 1.5 tbsp

Steps

  1. Peel and dice the 150g of yam (nagaimo) into 5mm cubes.
  2. Finely chop the 1 green onion.
  3. Place the chopped yam and green onion in a bowl. Add 1.5 tbsp of Shiro Dashi (White Soy Sauce Base) and 2 tbsp of potato starch, then mix well.
  4. Cut 1 sheet of nori into 12 equal pieces.
  5. Arrange the cut nori on a cutting board. Use a spoon to place about 1/12th of the mixed yam mixture onto each piece of nori.
  6. Heat a generous amount of oil in a frying pan over medium heat. Once the oil is hot, place the pieces in the pan with the nori side down. (Key Tip!) To prevent the yam mixture from falling off the nori, gently slide chopsticks under the nori to lift and place it into the pan.
  7. Cook for about 1.5 to 2 minutes until the nori is crispy and the yam is golden brown. Flip.
  8. Cook the other side for another 1.5 to 2 minutes until golden brown.
  9. Once evenly browned, remove from the pan and drain excess oil.
  10. Transfer to a serving dish. (Key Tip!) Coating the yam with potato starch helps it adhere to the nori, creating a beautiful finish. If you find the flavor too light, you can serve with a side of salt.
