  • 1 Egg
  • 50ml Milk
  • 100g Pancake Mix
  • 2 slices Bacon (half-cut)
  • 6 Eggs
  • Mixed Cheese (to taste)

Seasonings

  • 1 tbsp Sugar
  • Pinch of Salt

Steps

  1. Preheat your oven to 180℃ (350℉).
  2. In a bowl, whisk together 1 egg, 50ml milk, and 1 tbsp sugar until well combined.
  3. Add 100g pancake mix to the egg mixture and stir until smooth with no lumps.
  4. Finely chop 2 slices of bacon into small cubes (about 5mm).
  5. Add the chopped bacon to the batter and mix well.
  6. Line muffin cups with parchment liners. If you don't have liners, grease the muffin tin thoroughly before pouring in the batter.
  7. Pour the prepared batter into the parchment-lined muffin cups.
  8. Carefully crack 1 egg onto the batter in each cup.
  9. Sprinkle a pinch of salt over the egg whites.
  10. Scatter mixed cheese over the egg whites.
  11. Place the muffin tin on a baking sheet and bake in the preheated oven at 180℃ (350℉) for about 18 minutes, or until golden brown.
  12. Carefully remove from the oven, being mindful of the heat. If the bread has cooled, you can reheat it gently in the microwave. Enjoy with black pepper, ketchup, or barbecue sauce to your liking.
