From Koutaro's "Let's Add This" series, we introduce the "Garlic Stir-fried Lotus Root," featuring a crispy texture that will leave you craving more. Enjoy a new texture with lotus root cut lengthwise, and a dish that whets your appetite with the fragrant aroma of garlic. Perfect as a snack or a side for rice!
Ingredients
Main Ingredients (2 servings)
- Lotus root: 2 small pieces (approx. 200g)
Seasonings
- Olive oil: 2 tbsp
- Minced garlic: 1 clove
- Chopped red chili pepper: 1 piece
- Salt: to taste
- Soy sauce: to taste
Steps
- Peel the skin off the lotus root using a peeler.
- Cut the lotus root, placed vertically, into 4 lengthwise pieces.
- Roughly cut the sliced lotus root into 3 more baton shapes. (This is the key!) Cutting lengthwise brings out a crispier texture.
- Heat 2 tbsp of olive oil in a frying pan over high heat.
- Once the pan is sufficiently hot, add the baton-shaped lotus root and sear until browned. (This is the key!) Sear over high heat until browned to enhance the aroma. Be cautious of oil splattering due to the moisture.
- Once the lotus root is browned, add 1 clove of minced garlic, 1 chopped red chili pepper, and a pinch of salt, and toss quickly to coat everything.
- Finish by adding soy sauce to taste and tossing to adjust the flavor.
