- Chives 1/2 bunch (50g)

Seasonings
- [A] Water 5 tbsp
- [A] Shiro Dashi (White Soy Sauce Base) 2 tsp
- [A] Oyster Sauce 2 tsp
- Sesame Oil 2 tsp
Steps
- Cut chives 1/2 bunch (50g) into 2-3 cm pieces.
- In a bowl, combine water 5 tbsp, shiro dashi (white soy sauce base) 2 tsp, and oyster sauce 2 tsp.
- Scoop tofu 1 block (300g) into bite-sized pieces using a spoon and add it to the bowl with the seasonings.
- Lightly beat eggs 2.
- Place the pan with the tofu and seasonings over heat and bring to a boil.
- Cover and cook over medium-low heat for 4 minutes. (This is the key!) Cook until the tofu is heated through and the liquid infuses the tofu with flavor.
- Add the chopped chives and sesame oil 2 tsp, and gently mix everything together, being careful not to break the tofu. (This is the key!) Lightly cooking the chives will preserve their aroma and enhance the flavor.
- Drizzle in the beaten eggs.
- Cook for 30 seconds to 1 minute until the eggs reach your desired doneness.
- Transfer to a serving plate.
- Drizzle with chili oil, if desired.
