Ingredients

Main Ingredients (2 servings)

  • Tofu 1 block (300g)
  • Chives 1/2 bunch (50g)
  • Eggs 2

Seasonings

  • [A] Water 5 tbsp
  • [A] Shiro Dashi (White Soy Sauce Base) 2 tsp
  • [A] Oyster Sauce 2 tsp
  • Sesame Oil 2 tsp

Steps

  1. Cut chives 1/2 bunch (50g) into 2-3 cm pieces.
  2. In a bowl, combine water 5 tbsp, shiro dashi (white soy sauce base) 2 tsp, and oyster sauce 2 tsp.
  3. Scoop tofu 1 block (300g) into bite-sized pieces using a spoon and add it to the bowl with the seasonings.
  4. Lightly beat eggs 2.
  5. Place the pan with the tofu and seasonings over heat and bring to a boil.
  6. Cover and cook over medium-low heat for 4 minutes. (This is the key!) Cook until the tofu is heated through and the liquid infuses the tofu with flavor.
  7. Add the chopped chives and sesame oil 2 tsp, and gently mix everything together, being careful not to break the tofu. (This is the key!) Lightly cooking the chives will preserve their aroma and enhance the flavor.
  8. Drizzle in the beaten eggs.
  9. Cook for 30 seconds to 1 minute until the eggs reach your desired doneness.
  10. Transfer to a serving plate.
  11. Drizzle with chili oil, if desired.
