Ingredients

Main Ingredients (2 servings)

  • 200g Ground meat blend
  • 30g Onion
  • 10g Breadcrumbs
  • 10g Milk
  • 15g Whole egg
  • 1 clove Garlic
  • Olive oil to taste

Seasonings

  • 2g Salt
  • 1g Cumin seeds
  • 1g Nutmeg
  • Black pepper to taste
  • [A] 2 tbsp Ketchup
  • [A] 1 tbsp Worcestershire sauce
  • [A] Water to taste
  • [A] 1 tsp Whole grain mustard
  • Oil to taste

Steps

  1. Finely mince 30g of onion. 【Here's the trick! Using raw onion instead of sautéed preserves its crisp texture and pungent flavor.
  2. Add 200g of chilled ground meat blend and 2g of salt to a bowl and knead with your hands until it becomes fluffy. 【Here's the trick! Using cold ground meat prevents the patties from cracking and helps them bind firmly. Success is achieved when the meat becomes fluffy and sticks to the bowl.
  3. Add the minced onion, 10g of milk, 10g of breadcrumbs, 15g of whole egg, grated garlic clove, 1g of cumin seeds, 1g of nutmeg, and black pepper to taste to the meat mixture and knead well until everything is incorporated.
  4. Firmly pat the meat mixture against the bowl to remove air, then shape into an oval with a little olive oil on your hands.
  5. Make a slight indentation in the center of the shaped hamburg steak. 【Here's the trick! This ensures even cooking while it fries.
  6. Heat oil in a frying pan over medium heat and cook the hamburg steaks. Keep a little oil under the meat at all times, and fry until golden brown on both sides. Aim for about 2 minutes per side.
  7. Once browned on both sides, reduce heat to very low, cover with a lid, and cook for 7 minutes. Do not open the lid during this time.
  8. Turn off the heat and let it rest in residual heat for 7 minutes.
  9. Plate the cooked hamburg steaks. Leave about 1 tbsp of the meat juices in the pan and wipe away excess oil with paper towels.
  10. Add 2 tbsp of ketchup, 1 tbsp of Worcestershire sauce, and 1 tsp of whole grain mustard to the pan with the remaining meat juices and heat to make the sauce.
  11. Pour the finished sauce over the hamburg steaks to serve.
