  • Chinese noodles 1 serving

  • [A] Salt 3 tsp
  • [A] Soy Sauce 2 tbsp
  • [A] Chicken soup base 2 tsp
  • [B] White Sesame Oil 4-5 tbsp
  • [B] Salt (to taste)
  • [C] Black Pepper 1/3 tsp (or to taste)
  • [C] Vinegar 1 1/2 tbsp

Steps

  1. In a pot, add 900ml of water and heat over medium heat. Add 50g of ground pork and break it up.
  2. Once boiling, add 3 tsp of salt, 2 tbsp of soy sauce, and 2 tsp of chicken soup base. Simmer over low heat.
  3. In another pot, heat 4-5 tbsp of white sesame oil.
  4. In a bowl, combine 1 bunch of chopped chives and a pinch of salt. Pour the hot sesame oil over it and mix well. (Key tip! Pouring hot oil brings out the chives' aroma.)
  5. Once the soup becomes clear, skim off any scum.
  6. Add 1 serving of Chinese noodles to the boiling soup and cook for about 2-3 minutes.
  7. In a serving bowl, add 1/3 tsp of black pepper (or to taste) and 1 1/2 tbsp of vinegar and mix.
  8. Once the noodles are cooked, first pour the soup into the bowl, then add the noodles.
  9. Pour in the remaining soup and generously top with the sesame oil-infused chives.
  10. Finally, sprinkle with finely chopped green onion (to taste) and it's ready to serve.
