Steps
- Add 1.5 liters of water and 1.5 tbsp of salt to a pot and bring to a boil.
- Make a few cuts at the base of the spinach to open up the packed dirt.
- Rinse the spinach under running water, cleaning off the dirt from the roots and leaves. Once rinsed, drain the water.
- Gently submerge the spinach into the boiling water, starting with the roots, ensuring the entire bunch is covered.
- Blanch the spinach for about 30 seconds.
- Quickly cool the blanched spinach under running water, then submerge it in cold water for about 5 minutes once it has cooled. [This is the key!] Cooling it keeps it crisp and maintains its vibrant green color.
- In a microwave-safe bowl, add 2 tsp of peanut butter and microwave for about 15 seconds until melted.
- To the melted peanut butter, add 1 tsp of soy sauce, 1 tsp of mirin (sweet rice wine), 1 tsp of sugar, and 2 tbsp of toasted sesame seeds. Mix thoroughly to create the dressing.
- Gather the spinach from the cold water, aligning the roots, and gently squeeze out the water. Repeat this process about 3 times. [This is the key!] Squeezing too hard will cause the flavor to escape, so squeeze gently to preserve the natural taste.
- Cut the squeezed spinach into bite-sized pieces.
- Add the cut spinach to the bowl with the dressing and mix using a rubber spatula until the dressing is evenly coated on all the spinach.
