With kiwi enzymes, readily available Australian beef from the supermarket becomes surprisingly tender and tastes like it came from a steakhouse. This is Ryuji's ultimate grilling method and kiwi sauce recipe, allowing you to easily enjoy authentic steak at home.

Ingredients

Main Ingredients (2 servings)

  • Australian Beef (Loin) 300g
  • Australian Beef (1 pound) 400g
  • Kiwi, 1½
  • Garlic 15g
  • Scallions, to taste

Seasonings

  • Salt ⅔ tsp (4g)
  • MSG(Ajinomoto) (MSG) 7 dashes
  • Black pepper, to taste
  • Oil 1½ tbsp
  • [A] Butter 15g
  • [A] MSG(Ajinomoto) (MSG) 2 dashes
  • [A] Soy sauce 1½ tsp

Steps

  1. Trim both ends of 1½ kiwis and peel them with a peeler.
  2. Grate the peeled kiwi.
  3. Slice 15g garlic thinly for garlic chips.
  4. Lightly cut the sinews of 300g Australian beef (loin) with a meat tenderizer.
  5. Cover 400g Australian beef (1 pound) with plastic wrap and pound it thin with a meat mallet or similar tool.
  6. Season the meat with salt. Sprinkle ½ tsp (3g) salt over the entire 300g loin and ⅔ tsp (4g) salt over the entire 400g 1-pound steak.
  7. Season the meat with MSG(Ajinomoto) (MSG). Sprinkle 5 dashes of MSG(Ajinomoto) over the loin and 7 dashes of MSG(Ajinomoto) over the 1-pound steak.
  8. Sprinkle black pepper, to taste, over the meat.
  9. Marinate both sides of the meat with the grated kiwi. Marinate the loin for 15 minutes and the 1-pound steak for 20 minutes.
  10. Add 1½ tbsp oil and 15g thinly sliced garlic to each of two frying pans and heat over medium heat.
  11. Once sizzling, reduce heat to low and cook until golden brown to make garlic chips.
  12. Once the garlic chips are golden brown, turn off the heat and remove only the chips, leaving the oil in the pan.
  13. Place the marinated meat on kitchen paper and wipe off the kiwi and moisture.
  14. First, grill the 1-pound steak. Heat the frying pan with the remaining garlic oil over medium-high heat, add the meat, and frequently flip it to brown it. [Pro Tip!] Flipping frequently helps the meat cook through evenly.
  15. Once the meat is nicely browned, wrap it in aluminum foil and let it cook through with residual heat.
  16. Lightly wipe off any burnt bits from the frying pan used to cook the 1-pound steak.
  17. Add [A] 15g butter, the remaining grated kiwi, [A] 2 dashes of MSG(Ajinomoto), and [A] 1½ tsp soy sauce to the frying pan and reduce to make the sauce.
  18. Next, grill the loin. Heat the frying pan with the remaining garlic oil over strong medium heat, add the meat, and brown each side.
  19. Add [A] 10g butter, the remaining grated kiwi, [A] 1 dash of MSG(Ajinomoto), and [A] 1 generous tsp soy sauce to the frying pan used to cook the loin and reduce to make the sauce.
  20. Slice the grilled 1-pound steak, arrange on a plate, and drizzle with the prepared sauce.
  21. Sprinkle with the reserved garlic chips and black pepper, to taste, and garnish with scallions, to taste.
  22. Arrange the grilled loin steak on a plate and drizzle with the prepared sauce.
  23. Sprinkle with garlic chips and black pepper, to taste, and garnish with scallions, to taste.
