This is an easy Zenzai recipe that can be made in a rice cooker. Without the hassle of soaking azuki beans, just press the button and they'll cook up plump and tender. - Azuki Beans 150g
- Mochi (Rice Cakes)

- Salt a pinch
Steps
- Rinse 150g of azuki beans under water.
- Place the washed azuki beans and 450g of water into the rice cooker pot.
- Cook using the regular white rice setting on your rice cooker.
- After cooking, if the azuki beans are still hard, let them sit in the rice cooker for 30 minutes to 1 hour to soften.
- Drain the softened azuki beans in a colander. (Key Tip! Draining the water once removes bitterness and astringency, improving the final taste.)
- Add the drained azuki beans, 450g of water, and 105g of sugar to the rice cooker pot.
- Stir everything briefly and cook again.
- After cooking, add a pinch of salt and mix.
- Taste and adjust sweetness by adding more sugar if needed, or add hot water if it has become too thick. (Key Tip! If the beans are not softened before cooking with sugar, they won't soften after sugar is added, so be careful. Adjust sweetness to your preference.)
- Pour the finished zenzai over grilled mochi.
