An easy and delicious broccoli bake recipe that you can make just by mixing and baking! It's low-carb and healthy, yet packed with the savory flavor of bacon and the richness of eggs, making it very filling. It's also a perfect dish for an appetizer.

- Broccoli 200g
- Bacon 5 slices
- All-purpose Flour 2 tbsp
- Eggs 2

- Vegetable Oil (to taste)
Steps
- Soak 1 small head of broccoli (200g) in water and wash off any dirt.
- Cut the washed broccoli into florets and stems, then finely chop both.
- Trim the tough end off the broccoli core and finely chop it.
- Place the finely chopped broccoli core in a bowl, cover with plastic wrap, and microwave at 600W for 2 minutes.
- Briefly rinse the softened broccoli core with water, let it cool, drain thoroughly, and place in a bowl. (Key tip: Heating the core beforehand retains a crispy texture and results in a delicious dish.)
- Finely chop 5 slices of bacon into 5mm-1cm pieces and add them to the bowl with the broccoli.
- Add 2 tbsp of all-purpose flour to the bowl and coat the broccoli and bacon. (Key tip: Finely chopping the broccoli florets helps the mixture bind together better.)
- Once coated with flour, add 2 eggs and 1/4 tsp of salt and pepper. Mix well while lightly beating the eggs. (Key tip: The savory flavor of the bacon will spread throughout, making it delicious.)
- Heat vegetable oil (to taste) in a frying pan.
- Spread the mixed batter evenly into the heated frying pan.
- Cover with a lid and steam-fry over low to medium heat.
- Steam-fry for about 2.5 minutes, until the batter starts to set and the bottom is browned. Carefully transfer to a plate.
- Wipe off any remaining oil, place the plate face down over the pan, and flip the batter back in. Reshape and cook the other side.
- Cook for about 2 minutes until both sides are nicely browned. Serve when done. You can drizzle with olive oil if desired.
- Cut into bite-sized pieces and arrange on a plate. Serve with ketchup or mayonnaise if you want more flavor.
