The ultimate recipe to recreate Sushiro's popular Crab Salad Gunkan at home. This time, we'll show you two ways to enjoy it: as gunkan sushi and as a donburi (rice bowl). This exquisite dish, made with imitation crab and special sushi rice, is easy to make yet offers an authentic taste. It's also highly recommended for hand-roll sushi parties.

- Imitation crab 50g
- Cooked rice 200g
- Nori (seaweed) to taste
Seasonings
- [A] Mayonnaise 1.5 tbsp (25g)
- [A] Ajishio (seasoned salt) 2 shakes
- [A] Milk 0.5 tbsp
- [A] Sugar 1/3 tsp
- [B] Rice vinegar 2 tsp
- [B] Sugar 1 tsp
- [B] Salt 1 pinch
- [B] MSG 1 shake
- [C] Soy sauce to taste
- [C] Wasabi to taste
Steps
- Warm 200g cooked rice.
- Finely shred 50g imitation crab.
- If it's too much trouble, crush 50g imitation crab with a rolling pin or chopsticks to shred it.
- Put the shredded imitation crab into a bowl, add 1.5 tbsp mayonnaise (25g), 2 shakes Ajishio, 0.5 tbsp milk, and 1/3 tsp sugar, then mix well.
- To the warm rice, add 1 tsp sugar and 2 tsp rice vinegar.
- Further add 1 pinch salt and 1 shake MSG, then mix in a cutting motion to make sushi rice. 【Here's the trick!】 Mixing sushi rice with a cutting motion helps it combine well. If it's too much trouble, you can use store-bought sushi seasoning.
- Form the sushi rice into bite-sized ovals, shaping them like gunkan sushi.
- Cut the nori in half and wrap it around the shaped sushi rice.
- Gently press the ends of the nori with the sushi rice to secure it.
- Place the prepared crab salad inside the nori-wrapped sushi rice.
- Serve the rice in a donburi bowl.
- Tear and place nori to taste on top of the rice. (Chopped nori is also fine).
- Generously top the nori with crab salad.
- Serve with soy sauce and wasabi to taste, if desired.
