Chef Ryuji's exquisite egg ajillo, cooked over an irori hearth. Soft-boiled eggs are simmered in abundant olive oil infused with garlic and chili peppers. Finished with his secret 'Honki Spice,' this masterpiece is perfect for snacking, boasting a bold yet delicate flavor.
Ingredients
Main Ingredients (to taste)
- Eggs, to taste
- Garlic, to taste
- Chili peppers 2
Seasonings
- Olive oil, enough to cover the bottom of the pot by about 1cm
- Honki Spice, to taste
Steps
- Pour olive oil, about 1cm deep, into the hotplate.
- Add garlic, to taste, to the olive oil.
- Roughly add 2 chili peppers.
- Heat until the garlic becomes fragrant and forms a delicious garlic oil.
- Crack and add eggs, to taste, into the warmed oil.
- Simmer over low heat until the eggs are soft-boiled. 【PRO TIP!】 Ajillo is a stew, not a deep-fried dish. To achieve soft-boiled eggs, simmer without letting the edges get crispy.
- Finally, sprinkle with as much Honki Spice as you like.
- Place garlic on the soft-boiled eggs, then sprinkle with more Honki Spice for even greater enjoyment. 【PRO TIP!】 We also recommend placing the soft-boiled eggs on toast and adding extra spice.
