  1. Dice ham into bite-sized pieces, similar to the size of rice grains.
  2. Finely mince onion into pieces the same size as rice grains.
  3. Lightly beat 1 egg.
  4. Spread freshly cooked rice on a plate and let it cool slightly. [This is the key!] Cooling the freshly cooked rice slightly will result in a fluffy texture.
  5. Gently break up the cooled rice with the back of a ladle or your thumb, ensuring an even distribution of grains.
  6. Prepare 1 tbsp of red vinegar.
  7. Heat 2 tbsp (approx. 30cc) of Taihaku sesame oil in a frying pan and stir-fry the minced onion.
  8. Once the onion is cooked, add the rice. Without crushing it with the back of the ladle, flip and stir-fry to combine everything.
  9. Season generously with salt and pepper (to taste) to adjust the flavor.
  10. Add the beaten egg and stir-fry while mixing with the rice.
  11. Finally, add the prepared red vinegar, increase the heat, and stir-fry until the rice has a glossy finish.
  12. Add the diced ham and stir-fry briefly. It's done!
