This is a rich and hearty soup inspired by McDonald's popular Bacon Potato Pie. Enjoy the fluffy texture of potatoes and the umami of bacon, all melted into a creamy base thickened with soy milk. Surprisingly delicious and easy to make, it's a satisfying dish perfect for breakfast or a light meal.

- Potatoes 230-240g (peeled)
- Bacon 50g
- Soy Milk 250ml
Seasonings
- Butter 10g
- Consommé 2 tsp
- Water 100ml
- Sugar 1/2 tsp
- Black Pepper to taste
- Tabasco (for flavor variation)
- Salt a pinch
Steps
- Peel 230-240g of potatoes. 【Tip!】 Peeling them makes for a much more delicious soup, like a potage.
- Cut the peeled potatoes in half, then roughly chop them by rotating as you cut.
- Place the roughly chopped potatoes in a heat-resistant container, cover with a lid or plastic wrap, and heat in a 600W microwave for 5 minutes.
- Cut 50g of bacon into easy-to-eat pieces.
- Roughly mash the microwaved potatoes with a fork or similar utensil. 【Tip!】 The key is not to mash them completely, but to leave some small chunks.
- Melt 10g of butter in a frying pan, add the chopped bacon, and fry until lightly browned.
- Once the bacon is browned, add the mashed potatoes and stir-fry.
- Add 2 tsp of consommé, 100ml of water, and 1/2 tsp of sugar, then simmer. 【Tip!】 Adding a small amount of sugar deepens the richness and enhances the umami.
- Add 250ml of soy milk and simmer over medium heat for 7-8 minutes. 【Tip!】 Using soy milk allows the soup to thicken when heated, resulting in a creamy texture. If you want a thicker consistency, mash the potatoes further.
- Adjust the taste with a pinch of salt. The soup is done when it reaches a consistency slightly looser than stew.
- Serve in a bowl and sprinkle with black pepper. You can add Tabasco if desired.
