  • 2 Potatoes (300g)
  • 1/2 Onion
  • 50g Bacon

Seasonings

  • 3 tbsp Mayonnaise

  • [B] 1/2 tsp Soy Sauce
  • Salt to taste

Steps

  1. Cut the onion in half and trim the root. Chop into roughly 5mm thick pieces, cutting against the grain.
  2. Place the chopped onion in a bowl, add water and 1 tsp of vinegar, and mix lightly. Let it soak in the vinegar water for about 10 minutes to remove the sharpness.
  3. After 10 minutes, drain the onion thoroughly.
  4. Cut the bacon into 7mm to 1cm wide pieces. Cutting them in half, then in half again, is efficient.
  5. Heat a frying pan over medium heat and add the cut bacon without any oil. Spread it out and cook until it's crispy and browned, without moving it too much.
  6. Once browned on one side, flip and cook the other side. Turn off the heat once it's browned.
  7. Transfer the cooked bacon and any rendered fat to a dish.
  8. Peel the potatoes and remove any blemishes.

  13. After microwaving, remove the plastic wrap and check if the potatoes are cooked through by inserting a skewer. If they are still hard, microwave for an additional 1 minute at a time.
  14. While still hot, roughly mash the potatoes with a fork. You can mash them smoothly if you prefer.
  15. Season the mashed potatoes.   21. Once the potatoes have cooled, add 3 tbsp mayonnaise (adjust to your preference), the dissolved soy sauce and chicken stock mixture, and black pepper to taste (about two pinches), and mix everything together.
  22. Taste and adjust seasoning with salt to taste if needed. Add more mayonnaise if you want a stronger mayonnaise flavor.
  23. Transfer to a serving dish and it's ready.
