Chef Wakiya Yuji introduces an exquisite stir-fried noodle dish with only cabbage as an ingredient, using a secret anchovy sauce. The technique of browning both sides of the noodles and the cabbage, infused with the umami of the anchovy sauce, combine to create a dish that is simple yet profoundly flavorful.

- [A] Soy Sauce 1 tbsp
- [A] Sesame Oil 2 tbsp
- [B] Taihaku Sesame Oil 1 tbsp
- [B] Anchovy Sauce 2-3 tbsp
- [B] Water 4 tbsp
- [B] Pepper A pinch
- [B] Soy Sauce 1/2 tbsp
- [C] Sesame Oil 1 tsp
Steps
- Place 2 servings of yakisoba noodles in a bowl, cover with plastic wrap, and microwave at 600W for 1 minute 30 seconds to 2 minutes.
- Drizzle 1 tbsp soy sauce and 2 tbsp sesame oil over the loosened noodles and mix. 【Key Tip!】 To achieve delicious, fragrant stir-fried noodles, be sure to perform this pre-seasoning step for the noodles.
- Roughly chop 250g of cabbage.
- Add 1 tbsp Taihaku sesame oil to a frying pan and heat.
- Add the heated noodles to the frying pan and cook both sides over medium heat until golden brown. 【Key Tip!】 Cooking both sides creates a texture that is soft in the center and crispy on the outside.
- Remove the cooked noodles from the pan and loosen them.
- Add a little Taihaku sesame oil to the same frying pan and add the roughly chopped cabbage.
- Add 2-3 tbsp anchovy sauce and continue to stir-fry. 【Key Tip!】 Adding anchovy sauce will release moisture from the cabbage, and stir-frying over high heat will bring out the flavor of the anchovy sauce.
- Once the anchovy sauce has evenly coated everything, add 4 tbsp water and a pinch of pepper.
- Add 1/2 tbsp soy sauce.
- Add the yakisoba noodles back to the frying pan and stir-fry with the cabbage.
- Check the taste and texture of the noodles, and adjust with water or anchovy sauce as needed.
- Finally, drizzle with 1 tsp sesame oil and serve.
