Ingredients

- Shiitake Mushrooms 4-5 pieces
- Cilantro (Coriander) to taste
- Hard Cheese to taste
Seasonings
- White Sesame Oil 1 tsp
- Salt a pinch
- Butter 2 tsp
- Soy Sauce a dash
- Black Pepper to taste
Steps
- Slice the shiitake mushrooms into 5mm thick pieces.
- Heat 1 tsp of white sesame oil in a frying pan and spread it evenly.
- Arrange the shiitake mushrooms in the pan without overlapping, and sprinkle with a pinch of salt. Cook slowly over medium-low heat. (The Key!): Cooking out the moisture from the shiitake mushrooms will concentrate their flavor. If they start to puff up, gently press them down with a spatula.
- Once one side of the shiitake mushrooms is nicely browned, flip them over and add 2 tsp of butter.
- Reduce the heat and swirl the pan while cooking until the butter turns light brown and the bubbling subsides. (The Key!): Adding butter from the beginning can cause it to burn easily. By adding it later and browning it, you bring out its fragrant aroma.
- When the butter turns light brown, remove from heat and drizzle in a dash of soy sauce.
- Sprinkle with cilantro to taste and immediately remove from heat.
- Arrange on a plate.
- Sprinkle with black pepper to taste.
- Grate hard cheese to taste over the top and serve. Completed.
