- [B] Mirin (Sweet Rice Wine) 1 tbsp
- [B] MSG(Ajinomoto) (MSG) 3 dashes
- [B] Sugar 1 tsp
- Black Pepper to taste
- Green Onions to taste
Steps
- Crack 1 egg into a heatproof container and lightly break the yolk. Heat in a 600W microwave for 1 minute 10 seconds. 【Tip!】 Breaking the yolk prevents it from exploding during microwave heating.
- Finely break up the heated egg with a rubber spatula or similar tool. 【Tip!】 Breaking it up finely makes it similar to chopped hard-boiled egg. Cooking it in the container also reduces washing up.
- To the container with the broken-up egg, add 2 tbsp mayonnaise, 0.5 tbsp ketchup, 4cm Japanese mustard, and black pepper to taste, then mix well to make the tartar sauce. 【Tip!】 Adding ketchup enhances umami and sweetness, making a delicious tartar. Japanese mustard adds a refreshing kick.
- Lightly sprinkle salt and pepper to taste over the pack of pork belly bites.
- Add 2.5 tsp potato starch and 1 tbsp sake, then thoroughly rub into the pork belly bites. 【Tip!】 Rubbing with potato starch and sake makes the meat incredibly tender. The potato starch also coats the meat, thickening the sauce added later and making it easier to cling.
- Heat 0.5 tbsp oil in a frying pan over medium heat, then spread out the seasoned pork belly bites and cook. 【Tip!】 Since the meat is coated with potato starch, it's best to break it apart and spread it out as you cook to prevent lumps.
- Once the pork belly bites are browned and fully cooked, turn off the heat temporarily.
- To the pan with the heat off, add 1 tsp sugar, 1 tbsp soy sauce, 1 tbsp Mirin (Sweet Rice Wine), and 3 dashes MSG(Ajinomoto) (MSG). Turn the heat back on and simmer until reduced. 【Tip!】 Adding seasonings after turning off the heat prevents them from evaporating too quickly. Adding MSG(Ajinomoto) (MSG) combines with the inosinic acid in the pork, significantly boosting the umami.
- Once the sauce has coated everything, turn off the heat.
- Plate the teriyaki pork belly bites and generously spoon the prepared tartar sauce over them.
- Finish by sprinkling with black pepper to taste and green onions to taste.
