From Kentetsu's new series 'Delicious Potato Series', here's a simple potato pancake recipe. Enjoy a crispy, fluffy, and chewy texture, perfect for breakfast, snacks, or appetizers. Since it can be made easily by grating without a knife, it's ideal for busy days.
Ingredients
Main Ingredients (5-6 pancakes)
- 3 potatoes
- 1/4 onion
- 3 tbsp all-purpose flour
- 1 egg
Seasonings
- 1/3 tsp salt, or to taste
- Olive oil, as needed
- Coarse black pepper, to taste
Steps
- Prepare a large bowl.
- Crack 1 egg into the bowl and beat it.
- Grate 1/4 onion using a grater and add it to the beaten egg in the bowl.
- Next, grate 3 potatoes and add them to the bowl. [Key Tip!] Potatoes tend to discolor when exposed to air, so grate them last.
- Add 3 tbsp all-purpose flour and 1/3 tsp salt to the bowl and mix everything well. [Key Tip!] No need to sift the flour; you can mix it as is.
- Heat a generous amount of olive oil in a frying pan over medium-low heat.
- Drop the batter onto the pan using a spoon, forming slightly smaller and somewhat thick pancakes. [Key Tip!] High heat can cause them to burn, so cook them slowly over medium-low heat.
- Once the bottom is golden brown, flip and cook the other side until golden brown.
- Remove the cooked pancakes and drain any excess oil.
- Cook the remaining batter in the same way. This recipe makes about 5 pancakes.
- Plate the pancakes and sprinkle with coarse black pepper, if desired. [Key Tip!] Serving with sour cream and herbs (such as a mix of half heavy cream and half yogurt, with dill) is also recommended.
