Ingredients

Main Ingredients (5-6 pancakes)

  • 3 potatoes
  • 1/4 onion
  • 3 tbsp all-purpose flour
  • 1 egg

Seasonings

  • 1/3 tsp salt, or to taste
  • Olive oil, as needed
  • Coarse black pepper, to taste

Steps

  1. Prepare a large bowl.
  2. Crack 1 egg into the bowl and beat it.
  3. Grate 1/4 onion using a grater and add it to the beaten egg in the bowl.
  4. Next, grate 3 potatoes and add them to the bowl. [Key Tip!] Potatoes tend to discolor when exposed to air, so grate them last.
  5. Add 3 tbsp all-purpose flour and 1/3 tsp salt to the bowl and mix everything well. [Key Tip!] No need to sift the flour; you can mix it as is.
  6. Heat a generous amount of olive oil in a frying pan over medium-low heat.
  7. Drop the batter onto the pan using a spoon, forming slightly smaller and somewhat thick pancakes. [Key Tip!] High heat can cause them to burn, so cook them slowly over medium-low heat.
  8. Once the bottom is golden brown, flip and cook the other side until golden brown.
  9. Remove the cooked pancakes and drain any excess oil.
  10. Cook the remaining batter in the same way. This recipe makes about 5 pancakes.
  11. Plate the pancakes and sprinkle with coarse black pepper, if desired. [Key Tip!] Serving with sour cream and herbs (such as a mix of half heavy cream and half yogurt, with dill) is also recommended.
