This 'Cucumber with Sesame Miso Dressing' features quick flavor penetration with zero marinating time, thanks to a unique cutting method and special sesame miso. The accordion cut provides a delightful texture, making this spicy side dish perfect with rice or drinks.

Ingredients

  • Cucumber 3 (300g)

Seasonings

  • [A] Miso 1 tbsp and 2 tsp
  • [A] Sesame oil 1 tbsp and 1/2 tsp
  • [A] Soy sauce 1 and 1/3 tsp
  • [A] MSG 11 shakes
  • [A] Doubanjiang (Chili bean paste) 1 and 1/3 tsp
  • [A] Grated garlic 1/2 to 1/3 clove
  • [A] Ground sesame seeds 1 tbsp
  • [A] Sugar 1 and 1/3 tsp

Steps

  1. Cut off the ends of 3 cucumbers. Fix them with chopsticks placed on the cutting board and make accordion cuts diagonally. Tip! Placing chopsticks prevents cutting all the way through.
  2. Flip the cucumber over and now make vertical cuts to create the accordion.
  3. If the accordion-cut cucumber is too long, cut it in half.
  4. In a bowl, combine 1 tbsp and 2 tsp of miso, 1 tbsp and 1/2 tsp of sesame oil, 1 and 1/3 tsp of soy sauce, 11 shakes of MSG, 1 and 1/3 tsp of Doubanjiang (chili bean paste), 1/2 to 1/3 clove of grated garlic, 1 tbsp of ground sesame seeds, and 1 and 1/3 tsp of sugar. Mix well.
  5. Spread the prepared sauce over the accordion-cut cucumber.
  6. Massage the entire cucumber well to allow the sauce to penetrate deep inside.
  7. Marinating in the refrigerator for about 10 minutes will make it even more delicious.
