  • Rice 250g (warm)

Seasonings

  • White Sesame Oil 1.5 tbsp
  • Salt 1/3 tsp
  • Pepper to taste
  • Black Vinegar 3 tbsp

Steps

  1. Separate the egg yolk and white. Coat the rice with 1 egg yolk. Mix thoroughly so that each grain of rice is covered with the yolk.
  2. Heat a frying pan, add 1.5 tbsp White Sesame Oil, and add 250g Rice. Stir-fry over medium heat.
  3. Stir with a spatula until the rice becomes fluffy.
  4. Season with 1/3 tsp Salt and a pinch of Pepper.
  5. Add the reserved egg white and stir-fry, mixing with chopsticks, until it coats the entire rice.
  6. Increase heat and create a well in the center of the pan.
  7. Pour half of the 3 tbsp Black Vinegar into the center. Once it sizzles, repeat the motion of tossing the pan to finish. The secret here is that heating the vinegar mellows its sharp aroma into a rich umami flavor.
