Transform store-bought cold ramen into a gourmet experience. This recipe features tender chicken breast steamed in the microwave, with a little something extra added to the included sauce for a rich and flavorful ultimate cold ramen. A simple and delicious dish perfect for hot summer days.

Ingredients

Main Ingredients (2 servings)

  • Cold Ramen Noodles 2 servings
  • Chicken Thigh 1 piece
  • Cucumber 1
  • Long Green Onion 5-6 cm

Seasonings

  • Included Sauce Packet 1
  • Salt (pinch)
  • Sesame Oil 4 tsp
  • [A] Cooking Sake (Rice Wine) 3 tbsp
  • [A] Ginger Peelings 1 piece's worth
  • [A] Green Part of Green Onion (if available) 1 stalk's worth
  • [B] Soy Sauce 1 tbsp
  • [B] Vinegar 1/2 - 1 tbsp
  • [B] Grated Ginger 1 piece's worth
  • [B] Steaming Liquid from Chicken 2 tbsp
  • Pickled Red Ginger (Beni Shoga) (to taste)
  • Mustard Paste (to taste)
  • Mayonnaise (to taste)
  • Toasted White Sesame Seeds (to taste)

Steps

  1. Cut 1 Chicken Thigh in half lengthwise and make a cut into the thicker parts.
  2. Sprinkle a pinch of salt on the cut chicken.
  3. Place ginger peelings from 1 piece and the green part of 1 green onion stalk (if available, crushed) on the chicken, then sprinkle with 3 tbsp Cooking Sake (Rice Wine).
  4. Loosely wrap the chicken and steam it in the microwave to create steamed chicken.
  5. After cooking, remove only the steamed chicken and let it cool to room temperature. Reserve the steaming liquid.
  6. In a bowl, combine 1 packet of the Included Sauce, 1 tbsp Soy Sauce, 1/2 - 1 tbsp Vinegar, grated ginger from 1 piece, and 2 tbsp of the Steaming Liquid from the Chicken. Mix well to create the sauce.
  7. Finely slice 5-6 cm of Long Green Onion.
  8. Bring water to a boil in a pot and cook 2 servings of Cold Ramen Noodles.
  9. Thinly slice 1 Cucumber diagonally, then cut into thin strips.
  10. Rinse the cooked noodles in cold water and drain thoroughly.
  11. Shred the cooled steamed chicken.
  12. Arrange the drained cold ramen noodles in a bowl and toss with 4 tsp Sesame Oil. This is the key! Tossing with sesame oil first prevents the noodles from sticking and adds rich flavor.
  13. Arrange the shredded chicken, cucumber, and long green onion on top of the noodles.
  14. Pour the prepared sauce over the top.
  15. Serve with Pickled Red Ginger (to taste), Mayonnaise (to taste), Mustard Paste (to taste), and Toasted White Sesame Seeds (to taste) as desired, and enjoy!
